Finally Family Time

Can you believe that April is almost over?!?

tumblr_inline_mlshv4XjAy1rnvwt1And that means summer, freedom, warm weather, and awesomeness. Once I get through finals that is! I worked all hard all through the morning and afternoon so that I could go to my parent’s house for dinner and some relaxation!

photo-103 photo-105 photo-106What a cute family I have. I chatted with my mom while she whipped up a delicious dinner of quinoa, caramelized onions and peppers, and ham! It feels so good to be able to sit at the kitchen counter and talk to my parents while they cook.

I did a 50 minute bike hill workout this morning and then stretched and stretched. Felt great! I’ll be posting a new arm workout tomorrow per reader request so get ready to tone up those arms!! 😀



When I came home from work last night I was so exhausted that I plopped down on my couch and flipped on the TV to see what was on. I was thrilled to see one of my old favorite movies, Stick It, was showing!  Haha no judging.

I remember watching that movie the first time and being so inspired by the main actress, Missy Peregrym. She’s in incredible shape and is still definitely one of the people I look up to fitness-wise!

006STI_Missy_Peregrym_085 2006_stick_it_009Being reminded of how much I aspired to be in that great of shape someday when I first watched that movie made me wonder about other people who are great fitness role models. Looking at pictures of what your goals are can be so motivating! It gives you something to focus on when your workouts are getting challenging or that cupcake is screaming your name.

Some other celebrities who inspire me to workout are Jessica Biel and Paula Patton. All of these women are strong, in great shape, and still have a feminine figure. That’s my goal!

Remember that you can never have someone else’s body, only they can! But you can get into the best shape you can be in and that figure is just as beautiful.

My new obsession is Magnolia Cafe.

July-21-Magnolia-Cafe-2Ferris, Natalia, and I went there for dinner on Friday. “Everybody knows, everybody goes” because they are open 24 hours and serve up delicious and homemade cheap food like GIANT pancakes or this reuben that knocked it out of the park. YUM.

IMG_3284A shower, a change, and a few hours later I found myself on the rooftop of Love Goat, a bar in West Campus.

IMG_3290 IMG_3289A group of friends and I headed downtown and danced the night away. We weren’t ready to wrap up the festivities when they bars closed so we all headed to our friend Fasil’s apartment to hang out for a bit longer. I ended up going to bed around 4:30 am.

IMG_3291Who doesn’t need a good arm wrestling competition in their life? I worked for 9 hours today on 4 hours of sleep so I was a little loopy! I’ll be hitting the sack soon that’s for sure.

But first. I’m obsessed with this haircut and I want it so badly.

Hiking and Crafting

Today was essentially my Saturday since I have to work and study all weekend. I studied Chemistry in the morning but took the rest of the day to unwind, spend time with great friends, and clear my head from all these crazy decisions I’m trying to make!

My friend David picked me up at 12:30 and we drove to the Greenbelt and hiked along a dry riverbed for a few hours. Our families have been friends for years and it’s always so great to see him, talk, and catch up. Plus the views were beautiful!

Immediately after I got home, I had to change and head out to a biology presentation. My professor offered one point of extra credit for attending, so I thought why not! I expected it to be bland, dry, and way over my head.

Wat8But he was actually a great speaker! I thought it was crazy the trials that researches have to go to. They basically have to borrow millions or billions of dollars from capitalists and promise to turn over a test or a drug before they’ve even started! Sometimes it works out, but sometimes they end up losing that money and having to start all over. I don’t think I could handle having to constantly search for grants and employment and it gave me so much respect for what they do.

I was ravenous when I came home, so I whipped up dinner while talking on the phone to Hal. Then I headed to my friend Hannah’s house to make some mother’s day crafts with a bunch of friends! I left my camera there so I’ll have to share pics tomorrow, but check out what I made!

Food and Workout

PicMonkey CollageBreakfast: overnight oats with peanut butter. Lunch: turkey, cheese, and lettuce on and english muffin with an orange and carrots. Dinner: egg, onion, pepper, and broccoli wrap. Snacks: Dark chocolate honeycomb, an odwalla smoothie, and some cookies during craft night. AHHH LOTS OF SWEETS OOOOPS!!! YOLO!!! haha but I worked out hard today so it’s all good.

Yet another Nike training workout kicked my booty about 10 minutes ago. A shower and bed are in my extremely near future. Let’s hope I can sleep!

4 Step Quesadilla

Literally JUST finished eating this dinner and it was so incredibly delicious and easy that I knew I had to share it with you. Caramelized onions and peppers pretty much make everything taste gourmet and this quesadilla is no exception.

Step 1: Cook the peppers in a spot of oil until they are tender with a few brown spots.

IMG_3267Step 2: Remove the peppers and add chopped onions to the pan. Add water, two tablespoons at a time, whenever the pan gets dry so that the onions can get very soft and not burn. Cook until golden brown and soft. Once they are almost done, add the peppers back in to warm them up.

IMG_3268Step 3: Put half your pepper and onion mixture onto one half of a tortilla and add cheese.

IMG_3269Step 4: Grill for two minutes on each side until the cheese is melted and the tortilla is crispy and hot. Top with salsa.

IMG_3272HOLY YUM. And the best part?? Only 400 calories! Plus, since you only use half the peppers and onions it’s even easier to re-create the next day.

I had a pretty awesome day today! My alarm didn’t go off but I was still awake on time and I could hear the birds chirping and the sun was lighting up my whole room. Then, I found out my chemistry quiz has been moved to Friday and my bio professor gave me a big high five for getting a 102 percent on my test!

I don’t know what google is picking up on here that makes that an appropriate descriptive word..probably my mad flow. Or this:

IMG_3262Breakfast: Raisin Bran Crunch and scrambeled eggs. Lunch: Turkey sandwich, carrots, and an orange. Snack: Banana with peanut butter. Dinner: 4 step quesadilla.

My workout today was 20 minutes of biking followed by a leg/bicep/tricep workout. It was pretty sub-par, I just couldn’t get into it! But hey at least I got it done!

Handy Tips and Tricks

Lately I’m all about finding little ways to make life a little simpler and every day tasks a little easier. This is a list of handy little tips I use a lot! Some I discovered on my own, some I saw online and actually work, and some are from friends or family. Hopefully they can simplify your life a little too!

1. For a quick hairstyle after a shower, take a handful of mousse, flip your hair upside down, and comb it all the way through. Then, lift your hair at the crown and pin it in a semi pouf until your hair is mostly dry. Take the bobby pins down and your hair has great natural texture and volume!

IMG_32562. While in the shower, when your hair falls out, swirl it onto the shower wall instead of letting it wash down the drain. Then you can just throw it away when you’re done! It saves you from having to snake out a nasty drain or pick other people’s hair along with yours off the floor. EWWW!

3. When making pasta, put two big handfuls of spinach into your colander. When you drain the hot water, it will wilt the spinach, and you can easily stir it in with the noodles and sauce! It’s a super easy way to get tons of veggies and nutrients without any effort. I actually did this tonight with dinner. See the hidden veggies in there?!?

IMG_32604. When you can’t sleep, just wake up and do homework. You’re just going to lie there for hours and hours anyway, and the next day you’ll likely be so tired you can’t even focus on it. Last night I was wide awake so I did chemistry and research for my UGS class until about 3am. I’m not saying to make this a nightly thing, but if you can’t sleep anyway you might as well be productive instead of letting your mind run 100 miles an hour!

3 Schools, 1 Year

Well, I’ve had a mind numbing day to say the least. I don’t even know where to begin, when I look back on the events of this last year it’s like I’m dreaming.

First, I got to Washington State University and returned to Montana 3 weeks later because of a stress fracture in my spine.

imagesThen, I ventured to University of Texas at Austin, something I never thought was a possibility, to complete a whirlwind semester that is almost coming to a close.

imagesutAnd now, in a turn of events I never could have predicted, I’ll be returning to my home state and attending school at the University of Montana.

um-logo-maroon-copy1I can’t really even describe how I’m feeling right now, mostly just numb. It isn’t easy being displaced so many times. So many goodbyes and hellos, having to reestablish myself at every place I come to, and adjusting to a brand new environment over and over takes its toll. It’s hard to really immerse yourself in the culture and activities of a place when you feel like you’ll be pulled away by situations beyond your control at any moment. I finally feel like I’m making close friends and finding my niche here, and in a few weeks I’ll be gone.

BUT. Hopefully this is my LAST school change until I graduate. The University of Montana has one of the best study abroad programs I’ve ever laid my eyes on and I can’t wait to make that dream come true. I’m excited to be in the same town as Halley and Phoebe and the rest of my family.

I’m not quite sure what God is trying to show me this year. Maybe just how tough I can be! I’m going to try my best to keep rolling with the punches, staying positive, and working hard wherever I am!

Before any of these crazy events transpired, I woke up at 5am and got in a Nike Training workout. Lately I’ve been doing the “intense” level workouts and they’re kicking my butt.

I’m going to do my best these next couple weeks to stay focused on my schoolwork here. It’s not easy when my mind is running a thousand miles an hour trying to wrap itself around this new information. AHH.
