Current book: 

The Story of a Marriage. It’s really intriguing and well written and unlike any book I’ve ever read before. So far so good!

I’ve been listening to a lot more country lately! I found a station on Pandora that only plays the newer stuff and they’re are a ton of songs I love. Some examples are “Done” by the Band Perry and “This Summer” by Brad Paisley. Plus a lot more!

headerCurrent guilty pleasure:

My mom’s world famous chocolate cake. I had some for breakfast this morning and I was literally so excited about it that I had trouble falling asleep last night. Hmm…

Lilac. I finally went to target and bought another color after having them painted turquoise for six months. I didn’t bring any of my nail polish with me from Montana so I’m having to start over, but I love the new spring pastels!

I’d have to say water on that one. It is SO much hotter and more humid here than I’m used to so I find myself needing a bajillion times more water. Literally. A bajillion. My hobbies include drinking ice water and using the restroom.

Current food: 

For some reason tuna salad has been sounding amazing at all times. And other seafood as well, like those salmon burgers.

I wish this pulled ab muscle would go away so I could workout and get back to my usual active life. I also wish that my parents’ would know what they’re doing soon so they can feel more settled.

I need to take my psychology quiz today!

Current indulgence: 

I’ve been pretty lazy lately, what with having to heal and not having much to do, so I guess just taking lots of down time is an indulgence for me.

Current blessing: 

Getting to spend lots of quality time with my parents before I head to Montana and don’t see them for a long time!

Healing and 120 Calorie Muffins

Every day my stomach muscle makes so much progress! I went from having to take 1 inch side steps everywhere about a week ago to being able to walk normally without pain! I’m still taking it easy, icing and heating, and holding off on exercise until I feel 100 percent pain free, but wowza! I forgot that most injuries really only take a few weeks to heal, our bodies are really something.

Young woman doing yoga pose, arms raised, eyes closedI put that pic up because one thing that has made me feel so much better is taking a deep breath in while stretching my arms up to the sky until I feel a slight stretch in my abs. I’ve been doing this several times a day and they’re slowly healing and releasing. It led me to a big realization.

In the last 6 months of working out, I’ve never stretched out my ab muscles. After working them extremely hard, I just let them get tighter and tighter and tighter.

tumblr_lg7qb4V3731qebseoo1_500It’s really no wonder that I pulled it then! Imagine if you did leg workouts almost every day and never stretched, you’d pull a hamstring in no time. And the thing with abs is that they’re constantly getting worked even when you’re not specifically focusing on them. I thought I couldn’t stretch them since I can’t bend backward very far, but even laying down with my legs out or raising my arms high overhead is a great stretch.

Yet another lesson learned! Yoga classes here I come.

One thing that I have learned from having to take so much time away from exercise this past year is that it is possible to ward off weight loss by being careful about what you eat. When you can’t go out and burn off extra calories, a couple bad days can take a long time to undo, so it seems like you can never eat anything indulgent.

tumblr_inline_mk543zWzp61rg4uy0Yesterday I really wanted something a little sweet, so I scoured the internet for a healthy muffin recipe! I modified  one from Dashing Dish and the results were lovely!


2.5 cups rolled oats

1  six ounce carton Chobani Greek Blueberry Yogurt

Splash of vanilla almond milk

2 large eggs

1 1/2 tsp baking powder

1/2 tsp baking soda

1 1/2 cups strawberries, chopped

1/2 cup sugar

Directions: 1. Put all ingredients except strawberries into a food processor and blend until smooth. 2. Pour batter into a bowl and fold in chopped strawberries. 3. Place batter into a muffin tin lined with paper liners. 4. Garnish with strawberry slice. 5. Bake at 400 degrees for 22-25 minutes or until dark golden brown.

The baking time and heat seem long and high, but trust me they come out great! Nice and moist, dense, chewy, and just sweet enough. Plus, they’re only 120 calories each. Now that’s something I can get on board with!

Moving Out

I’ve discovered a new favorite breakfast! A bowl of organic Honey Clusters (basically an organic version of Honey Bunches of Oats) topped with a banana and vanilla almond milk. Delicious! It lasted me for a long time too.

Yesterday morning/ early afternoon was spent moving me out of my condo. The people who bought my dresser and mattress from me came and picked them up and we put a bunch of my things into bins.

IMG_3643My family has gotten super efficient at moving. We moved me into my dorm at Washington State, out of my dorm at Washington State, into my condo in Texas, and now out, and soon into my house in Missoula. Hopefully it’s my last move for a WHILE!!

I am so looking forward to having my own room! My roommate Paige and I got along great, but it’ll be nice to be able to practice my sweet dance moves in private.

tumblr_ltt7emQcM11qenumqo1_500Tehe. A place really does feel more like home when you have your own room, though. Plus I’m going to decorate it beautifully with the help of my sister! I’m so excited!

We grabbed lunch at Fuzzy’s Taco Stand which is a block away from my condo. I’m so mad at myself for never going there all semester!

IMG_3649I got two delicious breakfast tacos for four dollars. One was potato and egg and the other was chorizo and egg. YUM. I’ll be making a return visit before heading North for sure.

The scrabble board made another appearance yesterday afternoon, as did some random but delicious snacks.

IMG_3651 IMG_3650My mom and I watched the movie “Hope Springs” before dinner. It was okay…kind of awkward and slow but it had its moments. Dinner was leftovers made even better!

IMG_3652When you make those salmon burgers, caramelize the rest of the purple onion and put it on top. It brought the burger to a whole new level! That was my mom’s idea. I also used a thin layer of mayo instead of sour cream because I’m not a huge sour cream fan in the first place.

My online class starts today! My book is here, but I don’t know any of my login information or anything. I emailed my professor and hope she gets back to me quickly so I can get started!

Salmon Burger Recipe

I always see recipes in magazines that look fantastic, cut them out with plans to cook them soon, and then promptly forget all about them. But when I saw these salmon burgers in Prevention Magazine I knew I just had to make them! I’m so glad I did.

IMG_3636They’re extremely healthy, clocking in at 350 calories per burger (that includes the bun and sauce!) and providing tons of lean protein. They’re also inexpensive, each burger costs about 4 dollars when you calculate all of the ingredients.

IMG_3638Most importantly, they’re fresh tasting and delicious. I have one left over and I can’t wait to have this again! Make it yourself, you’ll be glad you did!





Scrabble Saturday

I slept in on Saturday! 8:30 instead of 7:30, going crazy over here! I made myself eggs and toast for breakfast and topped them with salsa. I underestimated how spicy the salsa was though. Hot hot hot!

When my parents seized a break in the rain as an opportunity to take my dog on a walk, I decided to do some playing in the kitchen. I’ve made these cookies before and I love them to pieces!

IMG_36151 cup rolled oats + 2 ripe bananas + a heavy sprinkle of cinnamon + 1.5 minutes in the microwave = heaven! The bananas get soooo sweet when you cook them, they really taste like cookies. At fifty calories a pop, they’re hardly a guilty pleasure, and all the ingredients have  been shown to help burn stomach fat. A cookie that will make my tummy flatter? Sign me UP!

Two cookies wasn’t exactly enough lunch, so I continued my sweet streak with Chobani Greek Yogurt topped with Honey Bunches of Oats. Mmmm.

IMG_3618We finally went and saw the new Iron Man yesterday!

IMG_3621loved it! Robert Downy Jr. is just incredible, you can’t not watch him. And Gwyneth Paltrow’s abs?!? What the what?!?

When we came home, I had the brilliant idea to pull out some board games! Gosh, I”m just such a genius.

IMG_3627After coming in at last place in our first game of scrabble, we made some popcorn in our whirly pop and then played another game. Which I also got the lowest score in. Guess I’m not such a genius after all! 😉

IMG_3623I sipped on an iced “latte” while we played. If you take coffee and pour it over ice and then add a couple inches of vanilla almond milk, it really tastes like an iced vanilla latte from starbucks! Plus it’s healthy. I loooove them.

IMG_3620Dinner was a small portion of our leftover Pea and Bacon pasta with a side caesar salad. I went to bed happy after a lovely day!

Also, the swelling on my stomach is down significantly! It’s nice to know I didn’t spontaneously gain 47 pounds or swallow a watermelon in my sleep. On the mend!

Rainy Memorial Day Weekend

I feel like Snoopy from Charlie Brown, “it was a dark and stormy night…” except that it was daytime. All day yesterday was dark and pouring down rain. It never fails that the weather is drizzly on memorial day weekend. Waffles seemed appropriate for the dreary day.

IMG_3605I topped each of them with a dollop of blueberry Noosa and a big pile of chopped strawberries. It tasted summery and delicious!

I finished the book “Under My Skin” yesterday.

62215It was just okay. The writing wasn’t really my style and I wasn’t a huge fan of any of the characters. It didn’t have much suspense, when things took a twist it was usually pretty predictable. However, it was a semi-entertaining and light read.

Lunch was the leftovers of my green chili chicken enchiladas from yesterday. Yummm! Leftovers are one of my favorite parts about eating out. Two microwavable minutes away from deliciousness.

IMG_3599To be honest, I really didn’t do much the rest of the day. My stomach was hurting and it was super rainy so staying in and being lazy seemed like a pretty good option. I snacked on an orange, read, watched some TV, and then helped my mom assemble a delicious dinner.

IMG_3613This recipe is from Jamie Oliver’s cookbook and it’s a huge favorite in our family. Simple and delicious. And when you use organic turkey bacon and whole wheat pasta, it’s very healthy! We devoured our pasta at the dining room table with a cool breeze from the rain pouring in.

What are your favorite rainy-day activities? 


Yesterday I felt like an official “Austinite”. I ate another delicious batch of oats in a jar with cinnamon, a banana, and a few dark chocolate chips before heading out to enjoy a few Austin institutions. Yum!

My friend David and I met at Magnolia Cafe, one of my favorite restaurants here. Right as I sat down, our waitress said “trust me, you want the green chili chicken enchiladas.” I thought it sounded fantastic so I ordered it!

IMG_3599It was a great recommendation. The beans and rice were spicy and flavorful and the green chili sauce on the enchiladas was on point. I ate half and can’t wait to enjoy the leftovers for lunch today!

Once lunch was over, we ventured to gourdoughs. I’ve been hearing about this place since the second I moved here and finally decided I needed to get in on the action. Gourdough’s is a food trailer that sells giant “Gourmet Donuts”.

Razzle-Dazzle-sRGBTheir flying pig donut is very popular, boasting lots of maple syrup and bacon.

thumb_600David and I split one, and I ate half of my half and brought the rest home for my mom to enjoy! It was SO good, but super intense. I could never eat more than 1/4 of one of their creations without feeling sick! But if you are ever in Austin, I highly suggest you pick up one of these babies to share with your friends.

I did some more reading when I got home and tried to send in my rental application. When dinner rolled around I wanted something light and full of veggies, so my mom had the brilliant idea to make a chicken caesar salad!

IMG_3602We ate around 5:30 and then drove to my condo in town to meet some people who bought my twin bed. They got it all moved out of there for me and someone is coming to pick up my dresser on Monday. It’s so nice that my furniture is all out of the way so all I have are clothes and little things to move.

My dad was in San Antonio for the day and when we arrived home we chatted with him for a long time. Around 10pm my salad was completely gone, so I ate a toasted English muffing with peanut butter to prevent myself from waking up in the middle of the night hungry. I’m looking forward to another great day!
