Bad Day vs. Good Day mash up

When you think about it, there are very few truly bad days. Even on some of the worst ones, there are good moments or fun things that happened after or before the crap snuck in. Yesterday was one of those! Let’s start with the bad because it’s so much better to end on a positive note, dontcha think?

Bad

1) Signing into blackboard to turn in my online paper and realizing I missed one of the tests while I was moving across the country, and I can’t make it up. Insert minor heart attack.

tumblr_m4016qhlHg1rolvqk2) Meeting with my advisor and finding out that my credits from University of Texas only count as electives so I have to re do the entire semester. I went to the head of the pre-med department and the registrar’s office, but nobody could help me. 16 grand and months of studying flushed down the toilet. Insert full blown panic attack and lots and LOTS of tears.

Good

1). I went to a pre-med meeting and left feeling like I have such a great support system here that really wants me to succeed. I also went to a “getting involved on campus” workshop and won a cool water bottle!

IMG_39072) I had an amazing lunch in the sun that consisted of whole wheat bread, avocado, and a super sweet apple.

IMG_39093) I had an incredible dinner with my aunt Caroline, uncle Fred, Phoebe, and Tobin and had a really great night talking with all of them. Then Phoebe and I went grocery shopping and I have some great meals planned for this week!

IMG_3911 IMG_3910Today I’m having lunch with my friend Tyler and then heading up to my cabin for the night! I’m still kind of sad but every day will keep being great and everything will turn out okay in the end 😀 Have a great one!

The Idiot

Today was a very productive day! It started bright and early with a 7am wake up call and a hearty, delicious breakfast.

IMG_3892I figured out that putting the peanut butter on top of my oatmeal while its still hot is SO much better than stirring it in while it cooks. You can taste it so much more and every bite has a little ribbon of creamy, melty deliciousness.

After breakfast I finished up my psychology research paper. It took much longer than it should have due to many breaks and general distractedness, but around lunchtime I finally finished and ran out to run some errands (after eating a bowl of quinoa and an apple).

IMG_3901I mailed Halley her climbing shoes, sent the rest of the money I owed to the people who I bought the bed from, and returned some things from Target. Then I came home and relaxed for a bit before heading to my transfer student meeting on campus.

As I was sitting outside the lecture hall before the meeting, two people walked up to me. Feeling super social, I introduced myself right away to the woman and was super smiley and sweet. I then proceeded to ask her the name of her dad.

Who turned out to be her husband.

Why???

tumblr_inline_mhrsry5e5X1qz4rgpThen we had to sit there for like ten minutes and wait for the meeting to start. That wasn’t awkward at all. Once the meeting was over, another wave of incompetence hit me and I was totally unable to find my way home. This is not a large campus. See, there is a little park across from my house that I’ve never noticed before, so when I saw that park I thought I must be going the wrong way.

rD1J7gVI wandered around the empty campus for thirty minutes getting more and more turned around and hungry. Finally, I had to call my mother and she gave me step by step instructions on how to get home (she grew up in Missoula). Yep, almost twenty years old folks and my sense of direction has refused to kick in. Sheesh.

Once I was done being an absolute moron for the day, I spent the next hour enjoying my book in the newly discovered park outside my house! After munching on some almonds and a small bowl of cereal, that is.

IMG_3902At six I walked down to my cousin, Phoebe’s, house to join her at “out to dinner”, an event held in the park by the river downtown. It was a gorgeous night and I am still blown away by how beautiful this city/state is.

IMG_3903I had a pulled pork taco and a beef taco with spinach, salsa, guac, and pepper jack cheese. Holy yum!! After dinner we walked around downtown for a bit to soak in the evening before calling it a night.

IMG_3905When I came home I had a really fun and long conversation with my roommate Madi. She’s  awesome! Now I’m off to bed, I have an entire day of orientation tomorrow. Lets see how that goes, shall we?

Made it to Montana

IMG_3867I am back in my home state!! 27 hours of driving later. I spent my first two nights in Billings. The first night Halley and I went to dinner with our friend Tamara and then had a Game of Thrones marathon! The next day Halley and I met up with Riley to hang out all day. We ate at the brew pub downtown, got fro yo, and hiked around in Zimmerman park.

IMG_3872 IMG_3874 IMG_3875That night Riley joined Halley, Russ (our family friend), and his kids Nick and Julia and I for dinner at Enzos. It’s a fantastic restaurant and anytime I’m in Billings I always make a point to go there. I had shallots with sweet corn risotto and it was incredible.

IMG_3877Monday morning I left for Missoula bright and early!! It is so beautiful here.

IMG_3882I’ve been doing a lot of work on my room, it started out as just a huge pile of stuff and is slowly starting to resemble a residence.

IMG_3879Today I finished up my closet and once I get a dresser most of my unpacking will be done!! I need a bed, desk, and dresser. Oy vey.

IMG_3888I’ve also eaten at Mackenzie River Pizza Company three times already. THREE TIMES. I stopped there for lunch in Bozeman, went there with my two cousins and aunt on my first night here, and then the family I’m nannying for ordered it last night.

IMG_3883No complaints over here, this is literally the best place to eat pizza that has ever existed. I have missed it so much!!

I still have a ton of work to finish up today so I’m going to head out! Have a great one! So happy to be here 😀

 

Adios Lone Star State!!

Today wraps up my time in Texas! I can’t believe it. I literally feel like I just got here and it definitely has not hit me yet that I’m leaving…I’m not quite sure it ever will. This all feels sort of like a super long field trip.

But we made the last day fun!! Lunch at (where else?) the Clay Pit…again.

IMG_3787Once my belly was full of curried veggies and a few other incredible dishes, we headed to the Ransom Center on campus to look at their exhibits. Admission is free and they have some incredible things to look at!

PicMonkey CollageThey have an original Gutenberg Bible, the world’s first photograph, plus traveling exhibits. Today’s were Literature and Sports (did you know Charles Dickens walked 20 miles a day?) and modern photography. We spent over an hour perusing everything before venturing outside to spend a little bit more time on campus.

CampusUniversity of Texas is such a gorgeous school and such an impressive institution. I feel so lucky that I got to go here, even though it wasn’t for nearly as long as I thought it was going to be!

When I came home I attempted to make some peanut butter and jelly muffins. They turned out more like…muffin crumble.

IMG_3806A couple things went wrong here…1) The jam I used was more like syrup and didn’t hold its shape whatsoever and 2) it called for a marble sized amount and I went for more of a golf ball. haha! At least they taste good!!

Tomorrow morning I have to wake up early and load up my car and hit the road! The next three days are going to consist of a LOT of driving. Yipee!

 

Tacos and Frosting

Yesterday we decided to get every last little bit of my stuff out of my condo in preparation for the big move on Thursday! We hit the road, I realized I forgot my condo keys, and we turned right around. By the time we made it to my neighborhood we were all starving. Fuzzy’s Tacos to the rescue!

photo-132I had two grilled veggie tacos on corn tortillas. They flavor them with garlic and feta cheese and they’re seriously delicious.

photo-131It didn’t take long to grab the rest of my stuff since it was mostly just sweatshirts and a few trinkets. Once the car was loaded up we all thought it would be fun to head to ikea just to poke around! I bought an apple at the cafeteria and my family had fro-yo. It’s only a dollar! Whaaa??

We also walked out with this gem. An empty frosting jar.

photo-130There was a woman serving samples of this stuff and I made a joke to Halley that it would make for epic oats in a jar. Halley went right up to the worker and asked what they did with the empty jars and when the woman responded that she throws them away, Halley asked if she could take it! haha! Go sister, I put my blueberry oatmeal in the jar this morning and it was fantastic.

On a healthier note, last night I also cooked these tilapia tacos with homemade crema:

IMG_2445_2Crema: 

1/4 cup chopped green onions

1/4 cup chopped cilantro

3 tablespoons plain greek yogurt

3 table spoons sour cream

Juice from 1/2 a lime

1 minced garlic clove

Sprinkle of salt

Combine all ingredients. Put in fridge to chill while preparing fish.

Tacos: 

16 ounce bag frozen tilapia filets

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp smoked paprika

1/4 tsp ground red pepper

1/8 tsp salt

1/8 tsp garlic powder

Cooking spray

2 cups shredded cabbage

8 corn tortillas

Combine all spices and salt. Rinse fish under cool water and dry with paper towel. Rub spices on each side and bake the fish on a cookie sheet sprayed with cooking spray according to package instructions. (My fish called for 20 minutes in a 375 degree oven). Once fish is cooked, put in a bowl and shred it.

Divide fish between 8 tortillas, top each with 1/4 cup cabbage and a dollop of the crema. Enjoy!

Stay-Cation

Since I don’t have a big trip planned for this summer (well, besides moving from Texas to Montana…) I’ve been treating Halley’s visit as a vacation for myself as well! That means taking advantage of all the fun things Austin has to offer that I sometimes take for granted when in the bustle of every day life.

We took a painting class at a homemade arts market that was a blast!

We’ve also eaten indian food at the Clay Pit two days in a row now. IT’S JUST SO GOOD!!! I also found out that the people who own Clay Pit also own the fast food indian restaurant Tarka! No wonder it’s so good.

claypit1 imagesAfter painting and getting in touch with our ethnic sides, we came home to meet up with our parents and head to the Man of Steel movie.

man-of-steel-henry-cavill-superman-image-frontOh, hello there. I really enjoyed the movie! The fight scene could have been shortened by about 20 minutes though. After about the 35th high rise had been smashed by some invincible body I kind of started zoning out. Still a good movie though 😀 Also, when you start typing H into google images, Henry Cavil is the first suggestion to pop up. I’d say he’s pretty super duper.

After the movie we went to our friend Hannah’s graduation party! They live out in the country and it was a stunning evening. I ate so much dessert I’m surprised I didn’t explode, played darts, and laughed my booty off. So fun!

imagesIf you don’t have a vacation planned for this summer, make one where you are! Think of all the things you’d do if you were visiting from out of town and plan a few days to do them all. Eat out, have dessert, and let window shopping be your cardio. Real life will always be there when you’re ready to go back to it.
