BI’m blessed to have several people who I call my best friends, but my sister Halley and I have been thick as thieves since I was born! She’s one of the best gifts God has ever given me.

CCake. When there is cake in the house I literally get so excited about having it for breakfast that I can’t sleep.

D. Day of choice?

Hmm..that’s a hard one! I like the social and relaxing aspect of Saturdays and Sundays, but I like my schedule on weekdays too.

eMy phone. I talk to my family all the time since they’re so far away from me right now and I love how technology these days makes it so easy to keep in touch.

F. Favorite color? 

FRed!

G. Gummy bears or worms?

Neither. I don’t like candy unless it has chocolate in it.

I. Favorite indulgence? 

Taking a day to read, watch movies, and just relax after several busy weeks.

JJuly! I prefer warm, sunny weather over cold.

Not for a long, long time!

LMy puppy Alice! It’s no secret that I’m crazy in love with this dog.

Apples, you can just grab them and eat! Oranges take a lot of work and are messy.

PI don’t have any true phobias, but if I ever got kidnapped I would not be cool, calm, and collected.

R. Reasons to smile? 

RI have countless, but right now I can’t believe how excited I am to be living in the same city as these two beauties!

Spring. It’s sunny, not too hot, there are flowers, and everyone is happy.

U. Unknown fact about me? 

I have to cut bangs periodically just to spice things up. I always hate them and get annoyed by them, but I just have to do it to reconfirm that I still don’t like them. Plus my hair kind of always looks the same so I like variety.

V. Vegetable? 

I like all vegetables except zucchini and tomato. The other day I made a zucchini and tomato gratin. Shockingly, I do not like it.

W. Worst habit? 

I forget to close cupboards and I let my gas tank get to empty before I fill it up.

X. X-ray or Ultrasound?

I’m tired of both.

Y. Your favorite food? 

YIndian food. When I go to India someday I’m going to gain 10 pounds, and I’ve already accepted that fact and made peace with it.

Z. Zodiac sign? 

Virgo.

In The Kitchen With Halley

My sister got home on Saturday night!! Her flight out of Billings was delayed and we didn’t think she was going to make it since her layover was cut short to only 5 minutes. Thankfully, she was able to make her flight and she arrived in Austin around 11:30pm. We were all super excited to see her, Alice included, of course.

IMG_2386_2Halley and I stayed up until 5 in the morning talking and catching up, but somehow I woke up at 8 yet again! Our mom cooked a magnificent breakfast of homemade Belgian waffles and we all sat at the table as a family. A couple hours later, the tiredness really hit me and I took an afternoon nap.

When I woke up Halley had created a fantastic lunch!

IMG_2392_2She whipped up a pasta sauce from ingredients we had on hand and it tasted delicious. Sleeping and eating, not a bad way to pass the day 😀

At one point in the afternoon we all went to HEB (our grocery store) to load up on food for the week. My favorite finds were blueberries and apricots. Fruit salad may be on the agenda for my snack today.

When we got home, the adults cracked open a few beers and we sliced up a mango to enjoy while cooking dinner.

IMG_2406_2 IMG_2397_2I’d forgotten how sweet mangos are. Fruit is amazing.

IMG_2409_2The other day in Health magazine, my mom saw an ad for Applegate Farms organic all-beef hot dogs. We hadn’t had hot dogs in years so we decided we should try them! The ingredient list is super short and only lists things like beef, onion, celery, etc. So many hot dogs are made of mystery meat, but these ones were actually pretty healthy.

IMG_2419_2I topped mine with mustard and relish and enjoyed some homemade sweet potato fries alongside. It’s crazy how you can chop up a sweet potato, top it with some seasoning, throw it in the oven, and it creates this crazy-addicting snack. YUM!

After dinner we watched game two of the Finals (what were you doing Spurs?) and I took a nice long bath. I am actually finding that I really like watching basketball. Usually I just expect to be bored so I check my computer and never know what’s going on, but when I pay attention it’s a blast!

Now we’re all caught up!

Breakfast

IMG_2420_2I toasted two of the leftover waffles and topped them with chocolate almond butter and a banana. It’s like eggos, but a bajillion times better.

 

Southwestern Stuffed Sweet Potatoes

This evening I was craving something veggie packed and healthy. I found a recipe for a stuffed sweet potato that looked like a winner! My mom and I went to HEB to grab what we needed for the recipe.

Alice also wanted to contribute to the evening meal.

IMG_2381_2She also wanted to know why I was wearing such unattractive house shoes.

IMG_2383_2Haha! With Alice’s help, we set about making dinner. A lot of recipes call for specific measurements like 1/3 cup chopped onion, 3/4 of a carrot, ect. Then you’re left with all these bits and pieces of produce that will go bad quickly and aren’t really enough to cook something else.

Cooking, unlike baking, doesn’t rely on perfect measurements. We usually just use up the entire veggie and then adjust the spices accordingly!

In the blink of an eye, we had a super healthy and delicious meal on our hands.

IMG_2384_2 IMG_2385_2I am soooo FULL. But I know that this is actually a light meal, so I didn’t want to wake up starving in the middle of the night! Here’s the recipe, I think you’ll love it as much as we did.

Panera and Star Trek

Today was one of my favorites of the last few weeks! I got out for a super short walk this morning and the weather couldn’t have been more perfect. I stopped every few minutes to lift my arms up and loosen my ab muscles, so I looked a little psycho. Or super into nature. Oh well! When I got home Alice helped me stretch out my legs and hips.

IMG_3700Around 11:30 my parents and I headed out the door to buy our movie tickets and enjoy some lunch! I picked Panera since I’ve always wanted to try it. I’m in love!

IMG_3704Well HELLO, carb heaven. I’d love to come here sometime and do my schoolwork and enjoy a breakfast treat! I’ll have to make that happen before I leave. For lunch I ordered the cuban chicken panini.

IMG_3703Which is not pictured here. This is my dad’s sandwich which I mistakenly ate a few bites of before we realized we had the wrong ones and switched! Mine had chicken, ham, cheese, spices, and pickles on it. If I had known the toppings beforehand I probably wouldn’t have ordered it but I loved it! The bread was amazing. I can see why people are so gaga over this place. I wish MIssoula had one.

IMG_3702After eating we went and saw the new Star Trek movie. Go go go go go go go!

star-trek-into-darkness-quadAwesome movie. Awesome movie. The special effects were breathtaking but didn’t supersede the plot and there was a great balance between comedy, action, and the relationships between the characters. I’d watch it again!

Once the movie ended we poked around Sprouts Farmers Market (a grocery store laid out like a farmers market with tons of organic products) and picked up some groceries. Then we came home and spent the early evening playing Yahtzee and Scrabble.

My mom cooked up a gorgeous meal and I made a side salad. Pasta puttanesca all around!

First Night In My New House

I’m whipping through this post because I have about 8 bajillion things to go study, but last night I got to sleep in my parent’s new house! I decided to head out there after work since I didn’t have class until noon today and I was missing my puppy like crazy. This was the first time she’d seen me in Texas and she was SO confused. She looked at me all guilty and smelled me forever, and then finally brought me a gift in the form of a bone. So cute!

photo-82I sat at the kitchen table and did my homework while talking with my mom about everything that’s going on in our lives. It really made Texas feel like my home! Also, it’s so unbelievably quiet out where my parents live. I got a better night’s sleep than I have in a long time. This morning I studied and dozed while Alice and my mom did the same.

photo-83Alice is still a little unsure about this new place. She follows my mom everywhere and seemed pretty forlorn when my dad left for work.

photo-84That’s her watching him leave. hah! Her facial expressions are so human. I headed back into town around 11 to make it in time for my government test. TESTS EW.

It is amazing having my family living in Austin. One of the things I love about my parents is that they aren’t pushy. They want me to be busy and have my own life, and they just love the times that I do get to spend time with them without making me feel guilty if I don’t see them in a while. Which makes me want to see them more! (Other parents: take note). It’s so nice to have roots here 🙂

Workout 

After my test I headed to the gym, warmed up on the bike, and worked my chest and shoulders. My legs are KILLING me from the last two day’s workouts so I didn’t push too hard on the bike. Need that recovery time! Off to study chem!

(I’m Going To) Miss Alice

I have the world’s most stubborn dog on the planet. Yesterday afternoon I took her for her usual walk around the neighborhood. Suddenly, out of the corner of her eye, she spotted her dream come true. A hot pink squeaky ball. She had to have it. I tried to pull her away so first she lay down on the sidewalk.

I called and coaxed and pulled and persuaded..but I only made the situation worse.

Surely she would give up in about ten more seconds right? She doesn’t even care about toys generally! I’ll just use my firm voice and make it clear we are leaving right this instant.

She carried the ball all the way around the rest of our walk and brought it home with her. Sorry to the poor dog who’s ball we stole, but it was either that or spend the night on the sidewalk. Alice does, however, have her tender moments.

We had a big heart to heart this morning about how she really doesn’t think I should leave. I agree.

This break has flown by way too fast and I’m not ready to say bye to her or my mom and dive back into my crazy life, but I guess I have no choice! I’ll get in the groove again. Isn’t it crazy how time flies.

The Best of the Best

The best alarm clock is one that whines at you to wake up and then gets in bed and snuggles with you for two more hours. photo-34

My iHome has never snuggled with me. Not even once. Also, baths are amazing. There is nothing like having super sore muscles or being tired and getting into a steaming hot bath.

Sooo nice. I don’t take baths in college because I’m pretty sure I’m the only one who has ever cleaned out my tub and it just kind of grosses me out. I’ll save them for home. Finally, my new best friend:

My condo’s dishwasher is broken and it’s not like it’s terrible washing dishes by hand, but it’s so nice to put them into this magical drawer and then in the morning they are all clean again. Hallelujah.

I get to see Halley and Phoebe today!! We’re heading to Missoula around 2pm and I plan on being lazy until then. I might workout, but I’m fighting off a cold so I can’t decide if I should or not.

Workout 

I did a 45 minute nike workout. Have I mentioned I’m in love with those things? It was super nice too because my living room is all cleared out so I have plenty of space to jump and squat my little heart out.

Our plumber was walking in and out the whole time too…made it a little awkward. Tehe! 🙂
