Test Day

I was up before 8 today which was a nice change of pace. Usually I wake up around 8:15 so having a little extra time in the morning felt nice! Even though it was already hot outside, the blueberries in the freezer and the banana on the counter were just begging to be incorporated into a bowl of oatmeal.

IMG_2430_2Two cups of coffee and this oatmeal later…I was already sweating. Then we took the dog out for a walk and I got even hotter! Yay for ice water! It really cools you right back down. Summer here is sort of like winter in Montana in that you really can’t go outside a lot of the day. The nice thing about summer, though, is that it’s still cool in the morning and at night. In winter it’s just 100 percent cold 100 percent of the time. Boo.

I have to take a psychology test today. It opened up yesterday at 10 am and is due tomorrow at midnight. I don’t think it’s going to be hard and it’s all open book but I’m just completely unmotivated to start. I’ll get it done this afternoon! Starting is the hardest part.

I found this article really interesting! Drinking three cups of coffee a day (small cups) is actually proven to be very beneficial for your health. Keep in mind that Starbucks fancy drinks do not count, it needs to be plain coffee with a splash of skim milk or almond milk. I knew there was a reason I loved coffee so much! 😀

New Fitness Classes

I’ve read over and over that the best way to keep exercise fun and effective is to incorporate tons of variety. Not only does this keep your brain engaged, it also works every muscle differently and produces more complete fitness and lessens the chance of injury. That being said, there are three types of workout classes I’ve read about that I’d love to try.

1. Underwater Spinning 

Bike2This is only available in a small number of studios across the world right now, but hopefully someday I’ll find myself in the vicinity. The bike provides the resistance so the faster you go, the more you work. Also, the massaging action of the water stimulates fat loss and the buoyancy you have in the water enables you to do more moves than a traditional spinning class. Maybe it would also keep my butt from getting so sore!!

2. Hot Yoga

bikram_slide2I won’t ever be this chic, but I’m interested in this class. I always feel amazing when I warm up my muscles and stretch them out, and this takes that to a whole new level. I get lightheaded pretty easily though so that makes me kind of nervous. Still, I think I need to try it!

3. Pilates Reformer

pilates3I am planning to do more Pilates since it’s such an incredible way to tone the body without impact and I’d love to try a class on one of the machines. They really intimidate me but I think once an expert showed me what to do I’d love it.

Food and Exercise

PicMonkey CollageBreakfast: strawberry pancakes with yogurt. Lunch: hummus, caramelized onions, and kale sandwich. Snacks: Raisin bran with yogurt, strawberries, and a square of dark chocolate. Dinner: apple, banana, and crackers with tuna.

No workout for me today, my stomach is still being way too funky!

Blueberry Maple Breakfast Sausages

My love affair with Central Market continues. This morning I am feasting on eggs and delectable sausages stuffed with blueberries and maple syrup. It may sound like a weird combination, but I’m definitely the person who lets the maple syrup from their pancake run onto the eggs and sausage, so it’s right up my alley.

sni-maple-syrup-400x400I love syrup. So much. I think the main reason I like pancakes and french toast so much is because of the tablespoon of sweet joy I get to put on them. YUUUMM. I think buddy the elf and I could hang.

Yesterday I worked from 2-7:30 and not a single person came into the shop. I straightened racks on racks on racks and then sat around bored. Until about 7:28pm, that is. Two girls sauntered in TWO MINUTES before we were supposed to close.They stayed until 7:45 messing up my straight shelves and I just wanted to politely ask them to please get the hell out of there.

Things I love

My last couple posts have been a tad on the negative side, so just to reconfirm that I haven’t morphed into a world hating cretin, here are some things I’ve found a deep love for recently.

1. My iPhone

photoBefore I moved to Austin I didn’t really realize how handy of a tool it is. The above picture is the UT app that shows my classes, my finals schedule, school events, and pretty much everything you need to know at UT. I’ve also used the GPS like crazy and it’s made navigating a big city a piece of cake.

2. Breakfast 

healthy-french-toastI’ve always loved breakfast, it’s pretty freaking awesome. I will wake up hours earlier than necessary so I can take the time to cook and savor a delicious morning meal. What I didn’t realize is how comforting it can be. When you wake up in a completely different place every morning surrounded by completely different people, it’s nice to know you can still have your french toast and coffee and things really aren’t totally different.

3. Furniture

He can’t organize all my baggage for me and I just feel like it might be time to move on to someone new.  I’m sorry, dresser, but I’ve been wearing the same outfits for 3 days in a row because all my clothes are stacked away in boxes. I just can’t live like this. *sob*

4. The weather here 

photo-17It is SO NICE. When it rains it smells like a tropical rainforest. At night your car actually has dew on it because the air is so deliciously humid. And last night I took a 40 minute walk in a light t-shirt in the middle of January. For a winter-hating gal’ it’s pretty much heaven.

5. The word y’all (ya’ll?) 

1.1269189740.howdy-y-allIt’s just so neat and handy. I haven’t said it yet because I’m too afraid. I feel like people will know I haven’t been here very long and I’ll say it and the conversation will just stop and everyone will stare at me like “ew”. Irrational? Possibly. Regardless, I’m going to wait a while until I start using it in my vernacular.

Quick, healthy oatmeal

Happy December! I figured to ring in the holiday month I would share with you one of my most favorite breakfasts. It’s hot, it’s delicious, it’s versatile, and it is low calorie and healthy! My sister, Halley, shared this recipe with me and now I’ll pass it along to you. Here’s what you’ll need:

1/3 cup oats, 2/3 cup vanilla almond milk, 1/3 cup water, a banana, and cinnamon.

IMG_1041Chop up the banana into tiny pieces in the bottom of your saucepan.

IMG_1042On top of the banana, add your 1/3 cup oats and sprinkle generously with cinnamon.

IMG_1043Pour in your 2/3 cup almond milk and 1/3 cup water until everything is covered. Place on a stove at medium high heat (my stove is pretty wimpy so if yours isn’t I’d stick with medium!)

IMG_1044Let the oatmeal cook uncovered until it begins to simmer, about 5-7 minutes.

IMG_1046Once your oatmeal begins to simmer (it starts smelling delicious at this point) turn down the heat to medium and stir constantly until it reaches a thick, creamy texture. Yum! Now it’s done and you can add whatever toppings you want! I went for a spoonful of peanut butter this morning to get some healthy fats and protein.

IMG_1049This breakfast rings in at 360 calories (with the peanut butter topping) and keeps you warm and full on cold winter mornings. Doesn’t get much better than that! Here’s a printable version if you want to try it out 🙂
