BI’m blessed to have several people who I call my best friends, but my sister Halley and I have been thick as thieves since I was born! She’s one of the best gifts God has ever given me.

CCake. When there is cake in the house I literally get so excited about having it for breakfast that I can’t sleep.

Hmm..that’s a hard one! I like the social and relaxing aspect of Saturdays and Sundays, but I like my schedule on weekdays too.

eMy phone. I talk to my family all the time since they’re so far away from me right now and I love how technology these days makes it so easy to keep in touch.

Neither. I don’t like candy unless it has chocolate in it.

Taking a day to read, watch movies, and just relax after several busy weeks.

Apples, you can just grab them and eat! Oranges take a lot of work and are messy.

RI have countless, but right now I can’t believe how excited I am to be living in the same city as these two beauties!

Spring. It’s sunny, not too hot, there are flowers, and everyone is happy.

U. Unknown fact about me? 

I have to cut bangs periodically just to spice things up. I always hate them and get annoyed by them, but I just have to do it to reconfirm that I still don’t like them. Plus my hair kind of always looks the same so I like variety.

V. Vegetable? 

I like all vegetables except zucchini and tomato. The other day I made a zucchini and tomato gratin. Shockingly, I do not like it.

W. Worst habit? 

I forget to close cupboards and I let my gas tank get to empty before I fill it up.

X. X-ray or Ultrasound?

I’m tired of both.

Y. Your favorite food? 

YIndian food. When I go to India someday I’m going to gain 10 pounds, and I’ve already accepted that fact and made peace with it.

Cooking up a storm

Cooking is quickly becoming one of my favorite things to do. Knowing that I’m eating food that is fresh and very good for me makes it easier to forget about calories and focus on nourishment! Today I made a batch of hard-boiled eggs to have around for a protein packed snack or a delicious egg salad sandwich.

IMG_2361_2I used Jillian Michael’s method and it worked like a charm! Simply put the eggs in a single layer in a sauce pan, cover with 1.5 inches of water, cover, and put on medium-high heat. Wait until it boils and then turn off the heat. Let sit, still covered, for 13 minutes. Meanwhile, prepare a bowl of ice water. Once the thirteen minutes is up transfer the eggs to the ice water until completely cool.

Then make egg salad!

Speaking of yum, I have a confession to make. I have an addiction. A serious addiction.

IMG_2366_2I’ve eaten so many strawberries this year it’s crazy. I had two bowls of them today, I just can’t get enough! They taste like candy to me! It’s an addiction I will continue to not battle for the rest of my life.

For dinner we whipped up a healthy version of sweet and sour chicken with tons of veggies and brown rice. It’s super fast and delicious!

Good reads and good eats

This morning after breakfast I took a walk around the block…twice! Walking and stretching really releases my abs and I feel so much better afterward. I was more active today than I have been in about a week and it was awesome!

I read my psychology book out on the deck after my walk and enjoyed being outside. It really makes any activity more enjoyable. Lunch was a hodge podge of scrambled eggs with peppers, pita chips and hummus, and the tiniest apple I’ve ever seen.

IMG_2329_2After lunch, my mom was going through the boxes in my sister’s room and she found the cutest thing! It’s a little suitcase with an old fashioned barbie plus tons of accessories inside.

IMG_2325_2 IMG_2327_2I’d never seen it before in my life and I just think its so adorable. One of those things you keep around for your kids to play with later on. Much, much later on.

I threw together a snack of dark chocolate chips and pistachios before heading out again with my family to half-price books!

IMG_2330_2I finished the last few pages of my book in about 2 minutes last night and had a heck of a time falling asleep after that. I need a good thirty minutes of reading before bed to “finish my day” and sleep peacefully. Luckily, I found a novel that looks amazing and it was so cheap!

photo-127It’s historical fiction which is my favorite genre by far. You learn so much about the past but it doesn’t read like a dry textbook, the characters provide the intrigue while the setting educates you about a certain time period. This one is about the civil war and my interest was peaked after watching the movie Lincoln so I think I’m going to love it.

When I got home I snacked on a yogurt and read for a while after taking another two laps around the block.

IMG_2331_2I’m having a hard time figuring out when I’m hungry! I know that sounds crazy, but for nearly two years I’ve relied on a calorie counter to tell me when and how much to eat so I’m really having to tune back into my body and listen for those signals. It’ll take some time but I know I’ll get back on track.

I got to do some cooking tonight which was a blast! Summer is perfect for tons of fresh veggies and this pasta dish had a million.

IMG_2335_2 IMG_2336_2Standing in front of a hot stove for an hour when it’s 95 degrees outside isn’t the best idea in the world, but it paid off! I loved this dish. So simple and delicious.

4 Step Quesadilla

Literally JUST finished eating this dinner and it was so incredibly delicious and easy that I knew I had to share it with you. Caramelized onions and peppers pretty much make everything taste gourmet and this quesadilla is no exception.

Step 1: Cook the peppers in a spot of oil until they are tender with a few brown spots.

IMG_3267Step 2: Remove the peppers and add chopped onions to the pan. Add water, two tablespoons at a time, whenever the pan gets dry so that the onions can get very soft and not burn. Cook until golden brown and soft. Once they are almost done, add the peppers back in to warm them up.

IMG_3268Step 3: Put half your pepper and onion mixture onto one half of a tortilla and add cheese.

IMG_3269Step 4: Grill for two minutes on each side until the cheese is melted and the tortilla is crispy and hot. Top with salsa.

IMG_3272HOLY YUM. And the best part?? Only 400 calories! Plus, since you only use half the peppers and onions it’s even easier to re-create the next day.

I had a pretty awesome day today! My alarm didn’t go off but I was still awake on time and I could hear the birds chirping and the sun was lighting up my whole room. Then, I found out my chemistry quiz has been moved to Friday and my bio professor gave me a big high five for getting a 102 percent on my test!

I don’t know what google is picking up on here that makes that an appropriate descriptive word..probably my mad flow. Or this:

321112_10150326878058389_1865963362_nFor “favorite musical artist” day during homecoming, my best friends and I dressed up like rappers. It was awesome. Damn it felt good to be a gangster.

Food and Exercise

IMG_3262Breakfast: Raisin Bran Crunch and scrambeled eggs. Lunch: Turkey sandwich, carrots, and an orange. Snack: Banana with peanut butter. Dinner: 4 step quesadilla.

My workout today was 20 minutes of biking followed by a leg/bicep/tricep workout. It was pretty sub-par, I just couldn’t get into it! But hey at least I got it done!

Something Dense and Something Asian

Yesterday I did a whole lot of cooking (again). I had a bunch of dough left over from when I made bagels a couple weeks ago so I thought I’d try my hand at baking a loaf of bread. The recipe called for a grapefruit sized piece of dough. I thought it looked pretty tiny on my counter but the people in the book said it would have a lot of “oven spring”. Whatever the heck that is.



As you can see, the bread did not have very much spring in its step even after being in the oven for 40 minutes. The flavor is good, but it’s extremely dense. It tastes like pure sustenance. Like something you would stick into your backpack on an extreme hiking trip where you need food that will last you an entire day on one piece. Which is perfect for me since I’ve been doing a lot of extreme hiking lately.

THEN the real cooking happened for dinner. I have been craving Chinese food like no other since Friday but I am not too keen on Chinese restaurants. Especially since what I really wanted was Sweet and Sour chicken but I don’t think any food is naturally neon red. I went online and found a low calorie recipe with tons of veggies, lean chicken, and a delicious sauce made from scratch.



My craving for Chinese was completely satisfied.
