Bad Day vs. Good Day mash up

When you think about it, there are very few truly bad days. Even on some of the worst ones, there are good moments or fun things that happened after or before the crap snuck in. Yesterday was one of those! Let’s start with the bad because it’s so much better to end on a positive note, dontcha think?

Bad

1) Signing into blackboard to turn in my online paper and realizing I missed one of the tests while I was moving across the country, and I can’t make it up. Insert minor heart attack.

tumblr_m4016qhlHg1rolvqk2) Meeting with my advisor and finding out that my credits from University of Texas only count as electives so I have to re do the entire semester. I went to the head of the pre-med department and the registrar’s office, but nobody could help me. 16 grand and months of studying flushed down the toilet. Insert full blown panic attack and lots and LOTS of tears.

Good

1). I went to a pre-med meeting and left feeling like I have such a great support system here that really wants me to succeed. I also went to a “getting involved on campus” workshop and won a cool water bottle!

IMG_39072) I had an amazing lunch in the sun that consisted of whole wheat bread, avocado, and a super sweet apple.

IMG_39093) I had an incredible dinner with my aunt Caroline, uncle Fred, Phoebe, and Tobin and had a really great night talking with all of them. Then Phoebe and I went grocery shopping and I have some great meals planned for this week!

IMG_3911 IMG_3910Today I’m having lunch with my friend Tyler and then heading up to my cabin for the night! I’m still kind of sad but every day will keep being great and everything will turn out okay in the end 😀 Have a great one!

The Idiot

Today was a very productive day! It started bright and early with a 7am wake up call and a hearty, delicious breakfast.

IMG_3892I figured out that putting the peanut butter on top of my oatmeal while its still hot is SO much better than stirring it in while it cooks. You can taste it so much more and every bite has a little ribbon of creamy, melty deliciousness.

After breakfast I finished up my psychology research paper. It took much longer than it should have due to many breaks and general distractedness, but around lunchtime I finally finished and ran out to run some errands (after eating a bowl of quinoa and an apple).

IMG_3901I mailed Halley her climbing shoes, sent the rest of the money I owed to the people who I bought the bed from, and returned some things from Target. Then I came home and relaxed for a bit before heading to my transfer student meeting on campus.

As I was sitting outside the lecture hall before the meeting, two people walked up to me. Feeling super social, I introduced myself right away to the woman and was super smiley and sweet. I then proceeded to ask her the name of her dad.

Who turned out to be her husband.

Why???

tumblr_inline_mhrsry5e5X1qz4rgpThen we had to sit there for like ten minutes and wait for the meeting to start. That wasn’t awkward at all. Once the meeting was over, another wave of incompetence hit me and I was totally unable to find my way home. This is not a large campus. See, there is a little park across from my house that I’ve never noticed before, so when I saw that park I thought I must be going the wrong way.

rD1J7gVI wandered around the empty campus for thirty minutes getting more and more turned around and hungry. Finally, I had to call my mother and she gave me step by step instructions on how to get home (she grew up in Missoula). Yep, almost twenty years old folks and my sense of direction has refused to kick in. Sheesh.

Once I was done being an absolute moron for the day, I spent the next hour enjoying my book in the newly discovered park outside my house! After munching on some almonds and a small bowl of cereal, that is.

IMG_3902At six I walked down to my cousin, Phoebe’s, house to join her at “out to dinner”, an event held in the park by the river downtown. It was a gorgeous night and I am still blown away by how beautiful this city/state is.

IMG_3903I had a pulled pork taco and a beef taco with spinach, salsa, guac, and pepper jack cheese. Holy yum!! After dinner we walked around downtown for a bit to soak in the evening before calling it a night.

IMG_3905When I came home I had a really fun and long conversation with my roommate Madi. She’s  awesome! Now I’m off to bed, I have an entire day of orientation tomorrow. Lets see how that goes, shall we?

Adios Lone Star State!!

Today wraps up my time in Texas! I can’t believe it. I literally feel like I just got here and it definitely has not hit me yet that I’m leaving…I’m not quite sure it ever will. This all feels sort of like a super long field trip.

But we made the last day fun!! Lunch at (where else?) the Clay Pit…again.

IMG_3787Once my belly was full of curried veggies and a few other incredible dishes, we headed to the Ransom Center on campus to look at their exhibits. Admission is free and they have some incredible things to look at!

PicMonkey CollageThey have an original Gutenberg Bible, the world’s first photograph, plus traveling exhibits. Today’s were Literature and Sports (did you know Charles Dickens walked 20 miles a day?) and modern photography. We spent over an hour perusing everything before venturing outside to spend a little bit more time on campus.

CampusUniversity of Texas is such a gorgeous school and such an impressive institution. I feel so lucky that I got to go here, even though it wasn’t for nearly as long as I thought it was going to be!

When I came home I attempted to make some peanut butter and jelly muffins. They turned out more like…muffin crumble.

IMG_3806A couple things went wrong here…1) The jam I used was more like syrup and didn’t hold its shape whatsoever and 2) it called for a marble sized amount and I went for more of a golf ball. haha! At least they taste good!!

Tomorrow morning I have to wake up early and load up my car and hit the road! The next three days are going to consist of a LOT of driving. Yipee!

 

Sparkling Water Basketball Game

Yesterday felt like a nice day of summer vacation! For lunch I used two more of the Chuys tortillas and the leftover sweet potato stuffing to make some veggie tacos. They were filling and deeeeeelicious. 

IMG_2434_2Halley and my mom ate lunch at the same time as me, and of course Alice had to be in on the action as well. 

IMG_2438_2Even though my lunch filled me up as I was eating it, I still got really hungry in the afternoon! Onions, corn, and black beans are not rich foods by any means so I really didn’t eat the much. That’s what I love about fruits and veggies, you can eat a lot! 

I snacked on an apricot, pita chips and hummus, and a small serving of frozen yogurt. For dinner we made more sweet potato fries and finished the leftover organic hot dogs. We were low on buns so I had to improvise. 😀 

IMG_2441_2After dinner, it was time to walk the dog and then settle in for game three of the finals! Halley and I came up with a “drinking game” (sparkling water for me) to make the game even more fun. Here were the rules:

Breakfast

My breakfast today was exactly the same as yesterday! 

IMG_2430_2Oatmeal with blueberries, banana, dark chocolate almond butter, and cinnamon. I got outside for some exercise before it got too hot and then had some errands to run. When I got home I snacked on a tortilla with hummus, yum!

Tex Mex

This afternoon I wanted to take my dad out for his birthday lunch! We looked up a bunch of different places, but I just couldn’t get Chuys out of my mind. I’ve been there SO many times but it always sounds good. The food is fresh, hot, and delicious. I snacked on an apple before we left so I wouldn’t be too hungry and end up stuffing myself.

IMG_2422_2My mom and sister looked gorgeous but I didn’t get the memo. Or maybe I did and ignored it. Tehe!

There was a 20 minute wait for a table! On a Monday afternoon. You know a place is good when it’s always busy! We waited outside to enjoy the sun 😀

IMG_2423_2Halley and I split the combo fajitas (beef and chicken). Fajitas are one of the healthiest things to get at a Mexican place since it’s protein, veggies, and it isn’t smothered in cheese or a heavy cream sauce. I ate two taco sized fajitas along with a small portion of rice and beans.

IMG_2425_2 IMG_2427_2The tortillas at Chuys are homemade and have a wonderful doughy texture. I got some to go and am looking forward to making a peanut butter and banana taco for breakfast. After lunch us girls went to target to look around. I found a new summer dress that I love! Plus nail polish to match.

photo-128Around 6:30, the Tex Mex fiesta continued when we made some incredibly creamy guacamole for dinner.

IMG_2429_2The avocados here are the best I’ve ever had and I can’t get enough! We wanted to highlight them so instead of incorporating them into a dish we decided chips and guac would make a darn good dinner.

Tonight we’re watching Pitch Perfect. I love that movie!

In The Kitchen With Halley

My sister got home on Saturday night!! Her flight out of Billings was delayed and we didn’t think she was going to make it since her layover was cut short to only 5 minutes. Thankfully, she was able to make her flight and she arrived in Austin around 11:30pm. We were all super excited to see her, Alice included, of course.

IMG_2386_2Halley and I stayed up until 5 in the morning talking and catching up, but somehow I woke up at 8 yet again! Our mom cooked a magnificent breakfast of homemade Belgian waffles and we all sat at the table as a family. A couple hours later, the tiredness really hit me and I took an afternoon nap.

When I woke up Halley had created a fantastic lunch!

IMG_2392_2She whipped up a pasta sauce from ingredients we had on hand and it tasted delicious. Sleeping and eating, not a bad way to pass the day 😀

At one point in the afternoon we all went to HEB (our grocery store) to load up on food for the week. My favorite finds were blueberries and apricots. Fruit salad may be on the agenda for my snack today.

When we got home, the adults cracked open a few beers and we sliced up a mango to enjoy while cooking dinner.

IMG_2409_2The other day in Health magazine, my mom saw an ad for Applegate Farms organic all-beef hot dogs. We hadn’t had hot dogs in years so we decided we should try them! The ingredient list is super short and only lists things like beef, onion, celery, etc. So many hot dogs are made of mystery meat, but these ones were actually pretty healthy.

IMG_2419_2I topped mine with mustard and relish and enjoyed some homemade sweet potato fries alongside. It’s crazy how you can chop up a sweet potato, top it with some seasoning, throw it in the oven, and it creates this crazy-addicting snack. YUM!

After dinner we watched game two of the Finals (what were you doing Spurs?) and I took a nice long bath. I am actually finding that I really like watching basketball. Usually I just expect to be bored so I check my computer and never know what’s going on, but when I pay attention it’s a blast!
