Snacking and sleeping

Yesterday morning I got some great news from my doctor! He gave me a plan of action and I should be all better in a few weeks. For some reason after my appointment, though, I still had all this anxiety and nervous energy pent up!

tumblr_mekn1yFJMt1rm4qs9o1_500I called my parents and had a nice long chat with them and it really seemed to help. I’m still feeling kind of nervous and unsure but I think that it is going to take a few days for it to hit me that this isn’t going to turn into some huge deal! I’ll just be patient.

After my appointment I hit up the grocery store to load up on healthy ingredients for the next few weeks. I bought apples, grapes, a rotisserie chicken, some veggies, and a huge box of spring mix. I’m planning to fix some big salads every day for lunch to get lots of fiber and protein!

cpks-provencal-saladI have to admit my eating the past couple weeks has not been the best. I’ve been really stressed and not sleeping, so I start out with a healthy breakfast but become a snack machine as the day goes on. When I’m so tired my body craves things like sweets and simple carbs, so I really need to get back on the wagon. Now that I know what’s going on with my health and can start sleeping again it will be easier to get back to tons of fruits and veggies and only 1 or 2 snacks a day between meals.

Thank you for all your well wishes on the job interview yesterday! I think it went really well. It was pretty short and all the questions were basic so I think I presented myself in a good light. I was in a rush to get there though so I only had time for hair and not makeup.

IMG_4177Oh well! It’s too hot for makeup anyway, right? After my interview I headed off to nanny until the early evening. Two girls I used to babysit in Great Falls are staying with the family I work for this week and it’s been wonderful to see them again. They’re turning into such neat people!

Last night I went to bed super early and took some Zzzquil in order to fall asleep. It really helped me! I think when we get too exhausted our bodies have trouble letting go. All day long you’re fighting off sleep and it’s hard to make the switch to relaxation when you lie down at night. The Zzzquil helped my body realize that it was okay to sleep now and sleep it did! For almost 12 hours.

I have to cut bangs periodically just to spice things up. I always hate them and get annoyed by them, but I just have to do it to reconfirm that I still don’t like them. Plus my hair kind of always looks the same so I like variety.

I like all vegetables except zucchini and tomato. The other day I made a zucchini and tomato gratin. Shockingly, I do not like it.

W. Worst habit? 

I forget to close cupboards and I let my gas tank get to empty before I fill it up.

I’m tired of both.

Y. Your favorite food? 

YIndian food. When I go to India someday I’m going to gain 10 pounds, and I’ve already accepted that fact and made peace with it.

Sparkling Water Basketball Game

Yesterday felt like a nice day of summer vacation! For lunch I used two more of the Chuys tortillas and the leftover sweet potato stuffing to make some veggie tacos. They were filling and deeeeeelicious. 

IMG_2434_2Halley and my mom ate lunch at the same time as me, and of course Alice had to be in on the action as well. 

IMG_2438_2Even though my lunch filled me up as I was eating it, I still got really hungry in the afternoon! Onions, corn, and black beans are not rich foods by any means so I really didn’t eat the much. That’s what I love about fruits and veggies, you can eat a lot! 

I snacked on an apricot, pita chips and hummus, and a small serving of frozen yogurt. For dinner we made more sweet potato fries and finished the leftover organic hot dogs. We were low on buns so I had to improvise. 😀 

IMG_2441_2After dinner, it was time to walk the dog and then settle in for game three of the finals! Halley and I came up with a “drinking game” (sparkling water for me) to make the game even more fun. Here were the rules:

My breakfast today was exactly the same as yesterday! 

IMG_2430_2Oatmeal with blueberries, banana, dark chocolate almond butter, and cinnamon. I got outside for some exercise before it got too hot and then had some errands to run. When I got home I snacked on a tortilla with hummus, yum!

Cold Breakfasts

I always wake up hungry and immediately walk to the kitchen, toes cracking like little firecrackers, to fix myself something to eat. My favorite breakfast meals are pancakes, french toast, or anything warm and sweet to accompany a hot cup of joe. However, when you wake up and it’s already 80 degrees outside, starting the day off sweating just doesn’t sound so great.

Bring on the cold breakfasts!

IMG_2371_2I asked my dad to pour a cup of coffee for me when he woke up super early so it was cool enough to pour over ice by the time I rolled out of bed. I mixed together a big bowl of cereal and a Chobani greek yogurt. It was cool and sweet. Perfect.

After breakfast I crawled right back into bed! I didn’t sleep well at all last night and I  decided to get in an hour more rather than fight through drowsiness all day long.

tumblr_mm3nvlzXu41qet1emo1_500When I woke up, again, I got ready (ish) for the day and began to tackle some of my schoolwork. I’m got about halfway through taking notes on the chapter before taking a lunch break.

IMG_2372_2I topped a piece of whole grain toast with chocolate almond butter and paired it with two hard boiled eggs! Whole grain, fats, fruit, and protein. Deeeelicious.

Tips for Back Pain

Good morning! As I was walking this morning I started thinking about how many people I know who are currently dealing with pesky backs. Three of my friends are having back pain and I know that it is a very common complaint. I thought I’d share some tips that I use to keep my back from bothering me. I hope they help you out!

1. Buy a memory foam mattress topper 

Memory-Foam-Mattress-Topper-picxI found one on for 150 dollars. It may seem pricey, but I was waking up every morning with a stiff back and the first night I slept on this that problem disappeared. I’d say that’s worth a lot!

2. Sleep on your side with a flat pillow between your knees 

Fig_4This keeps your spine in a neutral alignment all night so that it can relax from the stress of the day. Sleeping on your stomach arches the spine backward all night and often leads to back pain so if you sleep on your stomach I’d recommend switching. It will take some time but eventually this will become a super comfy way to sleep.

3. Wear good quality shoes 

imagesDanskos, Clark’s, and Aasics are three of my favorite brands. I notice my back getting achy when I wear cheap sandals or flats that offer no support.

4. Stretch 

stretchingStretching out my legs, abs, and hips is the number one thing that keeps my back feeling good. All those tight muscles can really pull on your back and cause pain or discomfort. Stretch for at least 10 minutes after every workout, and get a massage every once in a while to work out pesky knots.

Kerbey Lane is in Austin and Paul’s is in Missoula. I guess I picked some awesome places to live 😀

Yesterday I saved all my photos under June 4 because I had the date wrong, so today is unofficially June 4.1! Welcome to our brand new day!

I love making To-Do lists, as you probably know by now, because they set the tone for my day and give me a feeling of accomplishment when it is over.

Healing and 120 Calorie Muffins

Every day my stomach muscle makes so much progress! I went from having to take 1 inch side steps everywhere about a week ago to being able to walk normally without pain! I’m still taking it easy, icing and heating, and holding off on exercise until I feel 100 percent pain free, but wowza! I forgot that most injuries really only take a few weeks to heal, our bodies are really something.

Young woman doing yoga pose, arms raised, eyes closedI put that pic up because one thing that has made me feel so much better is taking a deep breath in while stretching my arms up to the sky until I feel a slight stretch in my abs. I’ve been doing this several times a day and they’re slowly healing and releasing. It led me to a big realization.

In the last 6 months of working out, I’ve never stretched out my ab muscles. After working them extremely hard, I just let them get tighter and tighter and tighter.

tumblr_lg7qb4V3731qebseoo1_500It’s really no wonder that I pulled it then! Imagine if you did leg workouts almost every day and never stretched, you’d pull a hamstring in no time. And the thing with abs is that they’re constantly getting worked even when you’re not specifically focusing on them. I thought I couldn’t stretch them since I can’t bend backward very far, but even laying down with my legs out or raising my arms high overhead is a great stretch.

Yet another lesson learned! Yoga classes here I come.

One thing that I have learned from having to take so much time away from exercise this past year is that it is possible to ward off weight loss by being careful about what you eat. When you can’t go out and burn off extra calories, a couple bad days can take a long time to undo, so it seems like you can never eat anything indulgent.

tumblr_inline_mk543zWzp61rg4uy0Yesterday I really wanted something a little sweet, so I scoured the internet for a healthy muffin recipe! I modified  one from Dashing Dish and the results were lovely!


2.5 cups rolled oats

1  six ounce carton Chobani Greek Blueberry Yogurt

Splash of vanilla almond milk

2 large eggs

1 1/2 tsp baking powder

1/2 tsp baking soda

1 1/2 cups strawberries, chopped

1/2 cup sugar

Directions: 1. Put all ingredients except strawberries into a food processor and blend until smooth. 2. Pour batter into a bowl and fold in chopped strawberries. 3. Place batter into a muffin tin lined with paper liners. 4. Garnish with strawberry slice. 5. Bake at 400 degrees for 22-25 minutes or until dark golden brown.

The baking time and heat seem long and high, but trust me they come out great! Nice and moist, dense, chewy, and just sweet enough. Plus, they’re only 120 calories each. Now that’s something I can get on board with!
