Decadent French Toast Topper

Yesterday was one of the best days I’ve had in a while! I got some work done in the morning and then my friend Gavin picked me up for lunch at 12:30. We headed to El Cazador since I’ve been craving Mexican food like crazy, and it was delicious!

ElCazador-BOM2012That guy wasn’t there though. Sad day. I had a bean enchilada on a corn tortilla with some rice, yum 😀 After lunch we walked around downtown for a while before stopping at the Big Dipper for ice cream.

BigDipper2copyrightmargaretdewilliamhorton-300x200This place has some of the best ice cream around and if you walk by around 7 or 8 on a summer night, you wouldn’t believe how long the line is. Luckily we didn’t have much of a wait at all and I got my white chocolate oreo scoop in a snap!

Around 3:30 Gavin and I met up with some of his friends from the football team along with some of their sisters/girlfriends/friends who are girls, ect. We floated on the river (I’m not sure which river it was…hmmm…) for a few hours just enjoying the sun and the cool water. There’s really no better way to spend a summer afternoon than being lazy on a river.

clarks-fork-river01All the boys had to be back for football practice at 6, so I went home to make myself dinner. Organic beef, roasted sweet potato, and peas were on the menu. I was super hungry and everything tasted great!

IMG_4055After I ate and showered, Gavin came back over and we watched “The Intouchables” on Netflix. It’s in French with subtitles so you have to pay attention, but this is an awesome movie. I was laughing SO hard at some parts and crying at others. Watch it!!

The-Intouchables-French-Movie-PosterThe fun continued today when I took the girls to the library and met them for lunch at the Tamarack with their mom, Jill. I had a salmon caesar without croutons and left happy.

lThe rest of the day has been spent doing homework, lounging around, and waiting for it to cool off a little so I can go on a walk. I wanted to share a little recipe I accidentally came up with for dinner tonight, though.

I had french toast with my gluten-free bread and was going to top it with strawberries and some marionberry syrup. Well, I over microwaved the strawberries and they got mushy and runny, so I just mixed two tablespoons of syrup right in!

IMG_4060The result was a decadent topping for my french toast. Um, yum! Just microwave 1/2 cup of frozen strawberries for 2 minutes, then stir in any fruit syrup of your choice. Pour over two slices of french toast and enjoy!


Summer Leisure

Yesterday was a great day! Nannying was a blast as the girls were super excited for the big BBQ they were having at their house later that night. I had to make sure the house and yard stayed shiny and clean, so we did lots of crafts and also some baking!

IMG_4040That was messy, but it was so much fun I didn’t mind cleaning it up. The girls got to mix the dough with their hands which they thought was pretty much the best thing ever. I managed to finish the cookies without eating the majority of the batter…win!

My ‘work’ day ended around 4pm and I swung by the Good Food Store to pick up a goodie that Food Farm doesn’t offer.

IMG_4041My friend Faith suggested I try going gluten free for a while and see what happens with my stomach. Her daughter, Hannah, had very similar symptoms to me that were completely resolved when she gave up gluten. I have to admit I’ve been a little judge-y of the vast amounts of people swearing off gluten, but if there’s a chance it will work I have to try! For 5.99 a loaf this stuff is bound to do something.

At six I picked up my grandmother and we drove to Bonner Park to enjoy some opening night concerts of the international choral festival.

IMG_4044The festival boasts choirs from Australia to Japan and everywhere in between, and is designed as a way for different cultures to bond over music. It was a perfect evening to be outside, listening to great music, and enjoying summer.

IMG_4045Once the concert ended, I planned to meet up with my friend Jordan at Starbucks before catching a late showing of White House Down. However, we didn’t know there were two Starbucks in town so we sat alone and enjoyed beverages while waiting for the other to show up.

IMG_4047I finally texted her and asked if there were two..haha! Oops! At least I got some fancy water out of it.

White House Down was really really good! So much better than I expected it to be.

white-house-down-poster07It wasn’t just 2 minutes of back story followed by 2 hours of shooting. There was a lot of suspense, behind the scenes action, family relationships, and a great script. If you wrote this movie off as a cheesy action movie and haven’t seen it, I’d suggest giving it a try!

Nanny McMorrison

Monday, Tuesday, and Wednesday were my first three days of nannying! At first I was a little nervous, wondering what we’d do all day. Luckily, the little girls I nanny are super creative and up for anything and we’ve had no trouble playing away summer afternoons.

Day one was full of outings. We went to the carousel and then to a big park with a huge play set for kids.

IMG_3934 IMG_3936We also spent a lot of time on the huge, gorgeous deck, playing in the kiddie pool, and doing crafts. A foray into tie dye was made…that was a terrible idea. Five year olds and tie dye go together about as well as a Pomeranian and espresso. Not well. No dye made it into the house, though, and the children and myself came out essentially unscathed. Success!

IMG_3937 IMG_3933My first day I wasn’t good at getting the girls to pick up what they played with. Turns out, phrasing demands as questions does not work well. The answer to “hey girls wanna go pick up your toys now?” will forever be no.

Day two was spent playing around the house. I got a bunch of laundry and cleaning done and in the morning before it got hot we walked to their school playground. I could easily see myself living in this area someday, it’s SO beautiful and there are some gorgeous houses out here.

IMG_3946 IMG_3945 IMG_3944On Wednesday the girls and I met up with their mother for ‘Lunch in the Park’. There are tons of different food items to choose from, and I  had coconut chickpea curry with naan. SO GOOD. Then I took the girls to Splash Montana. That was terrifying.

Crowds, water, hot sun blaring down, a lazy river full of commotion, and two teeny girls whose lives I am in charge of. Luckily, we all survived.

I think I’ve found myself an awesome summer job!! How’s your week going?

Good reads and good eats

This morning after breakfast I took a walk around the block…twice! Walking and stretching really releases my abs and I feel so much better afterward. I was more active today than I have been in about a week and it was awesome!

I read my psychology book out on the deck after my walk and enjoyed being outside. It really makes any activity more enjoyable. Lunch was a hodge podge of scrambled eggs with peppers, pita chips and hummus, and the tiniest apple I’ve ever seen.

IMG_2329_2After lunch, my mom was going through the boxes in my sister’s room and she found the cutest thing! It’s a little suitcase with an old fashioned barbie plus tons of accessories inside.

IMG_2325_2 IMG_2327_2I’d never seen it before in my life and I just think its so adorable. One of those things you keep around for your kids to play with later on. Much, much later on.

I threw together a snack of dark chocolate chips and pistachios before heading out again with my family to half-price books!

IMG_2330_2I finished the last few pages of my book in about 2 minutes last night and had a heck of a time falling asleep after that. I need a good thirty minutes of reading before bed to “finish my day” and sleep peacefully. Luckily, I found a novel that looks amazing and it was so cheap!

photo-127It’s historical fiction which is my favorite genre by far. You learn so much about the past but it doesn’t read like a dry textbook, the characters provide the intrigue while the setting educates you about a certain time period. This one is about the civil war and my interest was peaked after watching the movie Lincoln so I think I’m going to love it.

When I got home I snacked on a yogurt and read for a while after taking another two laps around the block.

IMG_2331_2I’m having a hard time figuring out when I’m hungry! I know that sounds crazy, but for nearly two years I’ve relied on a calorie counter to tell me when and how much to eat so I’m really having to tune back into my body and listen for those signals. It’ll take some time but I know I’ll get back on track.

I got to do some cooking tonight which was a blast! Summer is perfect for tons of fresh veggies and this pasta dish had a million.

IMG_2335_2 IMG_2336_2Standing in front of a hot stove for an hour when it’s 95 degrees outside isn’t the best idea in the world, but it paid off! I loved this dish. So simple and delicious.

Out of Class

Today was my final lecture EVER of my first semester of college! I can’t believe how fast the time has gone and how happy I am here. So blessed! Only two more finals and I am free. 

tumblr_inline_miu5l51ekd1qz4rgpI didn’t sleep much at all last night thanks to my stomach who is still revolting against me. Not eating makes it feel the best, but everything else worse, so I’m sticking to mostly liquid foods right now! Breakfast was a banana smoothie and for lunch I grabbed a frosty from Wendy’s.

photo-107Creamy, delicious, and awesome. Oh and super nutritious obviously. I had to turn in my paper and then I studied for a few hours at the Student Activity center. I ended up falling asleep for a good thirty minutes and then as I was walking out I accidentally high-fived someone who was raising his hand to wave at a friend.

Um. Whoops.

Then I had some serious work to do since I looked like I had just rolled off the hot mess train.

photo-108Chips=bad idea. Should have just gotten guacamole. Lesson learned! Then we visited our friend Alex who works next door at Marble Slab creamerie. I didn’t have ice cream this time, but we put Grace’s in the picture with me for artistic effect!

photo-109Then we went to the Cruplex and watched Toy Story Three and caught up with all our friends. I wanted to stay longer but I need to wake up and study! What an awesome night!!

What is happening

WTF. How is it February 28th already? How is Spring Break one week away? I still feel like I’m in my first week of college! Where is the time going? It’s crazy how just a few months ago time seemed to crawl by and every day felt like forever. Now the day is over in a flash and the weeks fly by in a maze of fun, business, studying, working, volunteering, ay ay ay…

tumblr_lwfy0uj1kq1r3ovdbo1_250Anyway, yesterday was yet another super productive day for this girl. I woke up early and went to my Chem professor’s office hours. She’s awesome and I go in there all the time to ask questions or clarify things so I’m ready for my test next week. Then I headed to the gym!

gymratMy hands are literally always doing weird things in photos. Look at that awkward fist I’m making! It’s like I’m going to give myself a lame fist bump in the mirror. It could have had something to do with the fact that I wasn’t alone in the aerobics room and I felt really weird.

Then I had class, and work (hanging up clothes when your arms are dead is killer), cooked another super healthy dinner, studied at Mozarts, and went to bed. Really shook it up. Not.


sexy summer armsA lot of people, women especially, neglect their arms because they want to focus more on lean legs and a washboard stomach. I totally used to be the same way, but when I hurt my knee I had to refocus more on upper body. I love it! A woman who has lean, toned arms looks so fit while wearing a tank top. As Jillian Michaels says, “your arms are the only part of you that most people will see naked.” If you’re fit, you want your arms to be a preview of what else is under all that clothing!! 🙂

I finished up my workout with 30 minutes on the bike and tons of stretching. My calves are still cramped up from that step class.
