Snacking and sleeping

Yesterday morning I got some great news from my doctor! He gave me a plan of action and I should be all better in a few weeks. For some reason after my appointment, though, I still had all this anxiety and nervous energy pent up!

tumblr_mekn1yFJMt1rm4qs9o1_500I called my parents and had a nice long chat with them and it really seemed to help. I’m still feeling kind of nervous and unsure but I think that it is going to take a few days for it to hit me that this isn’t going to turn into some huge deal! I’ll just be patient.

After my appointment I hit up the grocery store to load up on healthy ingredients for the next few weeks. I bought apples, grapes, a rotisserie chicken, some veggies, and a huge box of spring mix. I’m planning to fix some big salads every day for lunch to get lots of fiber and protein!

cpks-provencal-saladI have to admit my eating the past couple weeks has not been the best. I’ve been really stressed and not sleeping, so I start out with a healthy breakfast but become a snack machine as the day goes on. When I’m so tired my body craves things like sweets and simple carbs, so I really need to get back on the wagon. Now that I know what’s going on with my health and can start sleeping again it will be easier to get back to tons of fruits and veggies and only 1 or 2 snacks a day between meals.

Thank you for all your well wishes on the job interview yesterday! I think it went really well. It was pretty short and all the questions were basic so I think I presented myself in a good light. I was in a rush to get there though so I only had time for hair and not makeup.

IMG_4177Oh well! It’s too hot for makeup anyway, right? After my interview I headed off to nanny until the early evening. Two girls I used to babysit in Great Falls are staying with the family I work for this week and it’s been wonderful to see them again. They’re turning into such neat people!

Last night I went to bed super early and took some Zzzquil in order to fall asleep. It really helped me! I think when we get too exhausted our bodies have trouble letting go. All day long you’re fighting off sleep and it’s hard to make the switch to relaxation when you lie down at night. The Zzzquil helped my body realize that it was okay to sleep now and sleep it did! For almost 12 hours.

Quiet House

This morning after breakfast, I had planned to finish my school work for the week. I budgeted around 3-4 hours, looking forward to having work to do to make the day pass quickly and feel productive.

It took me twenty minutes.

She always warns that they may be challenging and we should be sure to take enough time to do them, so I always assume they’re going to take me a while. But today all I had to do was answer one discussion question! Hmm. I guess I should be glad!

A few hours of reading and hanging out later, it was time for lunch!

This house has been a pretty quiet place the last few days! My mom caught a bug on Wednesday and was laid out on the couch, feeling crappy. Today my dad caught the same thing and took my mom’s spot on the couch, and is now in bed. Our family is a wreck! haha

Lazy Thursday

I woke up to some great news yesterday. My chem teacher grades our tests SUPER fast and guess what I got? A 96. Didn’t even know that was possible for me.

tumblr_m5xo9h5X3E1qgfdhto1_500Now I just need and A on the next test and on the final! I can do it! So after that victory, I decided to basically take the day off. My history professor cancelled my 2 hour lecture because he’s in Nicaragua so I spent the entire day with my mom and Halley.

basketballIMG_3122Mom finally found a chair that fits her teeny self! It’s so cute. I also got two new summer outfits (just shorts and t shirts) but I love them because they’re SO soft and fit perfectly.

We ate dinner at Elevation Burger, saw the new house, and went to bed. Today it’s back to class and studying for me, but I’ll get to join my sister for dinner on her last night here at least!

Workout 

On Wednesday I did a nike training workout, but totally skipped out yesterday. Back on track in every aspect today.

Sugar Sugar How’d You Get So…Mean

Easter is almost here and do you know what that means? It means lent is over folks! I can finally sink my teeth into a delicious slice of carrot cake and sip some coffee. I’ve been looking forward to that creamy frosting, perfectly spiced, and moistly decadent cake for about a week now.

carrot-cakeBut once I savor that slice, I’m not planning to eat dessert again for about a month after that! And then a month after that!

tumblr_lpfxbgHxcl1qej55tI know, it seems cruel, but I don’t think I’m going to have a problem with it. It’s ¬†not that I¬†can’t¬†eat sugar, it’s that I don’t¬†want¬†to eat sugar. More and more compelling research has been coming out lately that white carbs (WHITE carbs like WHITE bread and CAKE. NOT whole grains) and sugar cause all sorts of nasty inflammation. I have plenty of spots in my body that are susceptible to inflammation (knee surgery, broken back, oh you know…) and I have honestly noticed them feeling much better in the absence of sugar. I’ve always been very sensitive to sugar’s effects though, it used to give me headaches and stomachaches as a kid!

So here’s my plan: 1 dessert a month. A month really is nothing, those four weeks fly by at an alarming speed. It will also make me very discerning when it comes to the treats I do have! If it isn’t worth having to wait an entire month for a different dessert, than I’m not going to want to eat it.

A Craving That Wouldn’t Quit

In the quaint and beautiful little town of Moscow, Idaho, a little cafe sits on the corner of a cobblestone courtyard. Beautifully decorated with large windows to let in the light and scrumptious pastries sitting on their magnificent bar, they serve up fresh organic fair. The name of this cafe is Bloom, and during my three weeks at Washington State (which is 6 miles away) I discovered my breakfast soul mate. Brioche French toast. So yesterday my dad and I headed out to reunite me with my love.

photo-62It was¬†incredible.¬†For those of you who may not know, brioche is a special type of bread that is basically packed with a ton more butter and slightly more sugar to give it this wonderful dense yet simultaneously flaky texture. It’s the perfect french toast bread. Combine that with cardamom syrup, fresh cream, and strawberries…it’s a winner. If you’re ever in Austin and get the chance to go to Mulberry for brunch, GO!

mulberry1It’s a very fancy joint in an expensive part of town, but my dad’s and mine breakfast wasn’t ¬†unreasonable and the portions were huge. With my ¬†belly full of sweet deliciousness, I tacked tons of studying and cleaning the rest of the day. It was wonderful!

Workout 

I was planning to take a rest day, but after studying on the couch for hours and hours my brain really needed some cobwebs shaken out of it. I did another 45 minute nike circut workout that destroyed me (in a good way) and I am for sure taking my rest day today. Gotta give those muscles time to recover!

Orientation confusion

Yesterday I had my orientation for UT…it was interesting. 99.9% of the folks there were transfer students who had gone through this whole college thing before and so they just kind of started whipping through information. I sat there while a bombardment of data crashed into my skull and through the madness I could make out bits like “study 1,000,000 hours a week” and “join student organizations” and “get enough sleep”. I calculated the hours and realized I’ll be working round the clock with no sleep for the next fifteen weeks.

Once that meeting was over (I just tried to spell meeting as meading if anyone wants to know, I need college) I cleared my head at lunch and realized that college students always have lives and I’m used to a busy schedule so I’ll keep up, stay organized and be fine. Phew…crisis averted. Then came the meeting with my advisor.

They didn’t have my AP scores. Why? She doesn’t know. I have to take a math and a chemistry placement exam today. By when? Oh tonight, she was supposed to tell me a long time ago but it slipped her mind. I laid out a schedule but some of the classes could be full, so which classes should I take instead if that’s the case? She isn’t sure. Something freshman can take. It’s pretty clear that I’ll be having to search for the answers to my own questions and pray registration goes smoothly. But I shall prevail.

CLZ9yDespite feeling a little overwhelmed and having a crappy advisor, it was a pretty great day. I met some awesome people at orientation who I’m looking forward to getting to know more, and Halley and I got to spend time with our second family, the Olsons, out in Dripping Springs, TX.

We ate an incredible meal that faith cooked full of veggies and deliciousness before heading out to an Italian restaurant to grab some dessert. After stuffing my face with Italian cream cake we stopped by an art gallery close to the movie theatre we were going to.

There were some amazing pieces and I found a cool, huge pillow that said “Life is Good” in a funky font but I can’t shell out fifty dollars for a pillow at this point so we walked out empty handed to see the Life of Pi.

I¬†loved¬†it! I’m so glad I caught it before it went out of theaters. It was stunning to to look and but didn’t rely on just visuals as it kept you engaged the entire time. I want to watch it again.

Winter Wonderland

You might be wondering why I am not in Bozeman right now preparing to hit the road after an amazing night with incredible friends. Well…Mother Nature had a different idea yesterday when she hit Montana with a huge snow storm. All the road reports were for ice and snow and limited visibility. I was disappointed I didn’t get to see my friends, but I’d rather not end up crying on the side of the road somewhere because I can’t see and I’m a big baby.

tumblr_luoxd3Wg8P1r6aoq4o1_250This morning when I woke up the snow had covered everything. Despite not being a winter fan, this type of snow is insanely beautiful. My yard looks like it is covered in diamonds and when you look at the right angle, you can actually see the individual crystals of snow. AND they really are shaped like the drawings! I felt like a little kid seeing snow for the first time when I saw that.

photo-20On this wintry morning I created one of the most decadent tasting breakfasts I’ve ever had. I say “decadent tasting” because it really only had 405 calories! Two tablespoons whipped cream cheese and a tablespoon of strawberry jam between two slices of wheat bread. Whip together some vanilla, an egg, and a splash of milk. Dip the sandwich and grill. Sprinkle with a dash of powdered sugar and viola!

photo-19It tasted like strawberry cheesecake, I kid you not. Try it out and prove me right, I dare you! As I ate this delicious breakfast looking out at the snow and listening to Christmas music, I really felt the Holiday Spirit. I am so excited for Christmas this year and for the month that follows…so many exciting things coming up!

When my whole house is decorated that really helps, but I think it’s mostly the music! Music is so incredibly powerful and when you blast cheery Christmas music you can’t help but be excited and sing along.
