Snacking and sleeping

Yesterday morning I got some great news from my doctor! He gave me a plan of action and I should be all better in a few weeks. For some reason after my appointment, though, I still had all this anxiety and nervous energy pent up!

tumblr_mekn1yFJMt1rm4qs9o1_500I called my parents and had a nice long chat with them and it really seemed to help. I’m still feeling kind of nervous and unsure but I think that it is going to take a few days for it to hit me that this isn’t going to turn into some huge deal! I’ll just be patient.

After my appointment I hit up the grocery store to load up on healthy ingredients for the next few weeks. I bought apples, grapes, a rotisserie chicken, some veggies, and a huge box of spring mix. I’m planning to fix some big salads every day for lunch to get lots of fiber and protein!

cpks-provencal-saladI have to admit my eating the past couple weeks has not been the best. I’ve been really stressed and not sleeping, so I start out with a healthy breakfast but become a snack machine as the day goes on. When I’m so tired my body craves things like sweets and simple carbs, so I really need to get back on the wagon. Now that I know what’s going on with my health and can start sleeping again it will be easier to get back to tons of fruits and veggies and only 1 or 2 snacks a day between meals.

Thank you for all your well wishes on the job interview yesterday! I think it went really well. It was pretty short and all the questions were basic so I think I presented myself in a good light. I was in a rush to get there though so I only had time for hair and not makeup.

IMG_4177Oh well! It’s too hot for makeup anyway, right? After my interview I headed off to nanny until the early evening. Two girls I used to babysit in Great Falls are staying with the family I work for this week and it’s been wonderful to see them again. They’re turning into such neat people!

Last night I went to bed super early and took some Zzzquil in order to fall asleep. It really helped me! I think when we get too exhausted our bodies have trouble letting go. All day long you’re fighting off sleep and it’s hard to make the switch to relaxation when you lie down at night. The Zzzquil helped my body realize that it was okay to sleep now and sleep it did! For almost 12 hours.

The Mustard Seed

I’m rolling on day two here with zero hours of sleep. I can remember every moment of the last two nights, except like 20 minutes when I dozed off after my alarm went off. WTF body? I’m fighting sleep all day and then I lay down and it evades me. So dumb.

tumblr_ml1geaAc2d1rwcc6bo1_250In happier news, I met my grandpa for dinner at The Mustard Seed last night. It’s an upscale asian restaurant that recently remodeled so we wanted to check it out! The decor was gorgeous and the food was even better.

OLYMPUS DIGITAL CAMERAI had chicken teriyaki that was perfectly moist, not too sweet, and delectable. Plus all their dishes are family style so I have enough leftovers for lunches today and tomorrow. Win!

Right before my grandpa called me I was debating whether or not to get take out from The Mustard Seed on my way home, so things couldn’t have worked out more perfectly.

I have a doctors appointment and a job interview today! Big day, wish me luck!

Interior Decorating (Help me)

Gavin and I put my dresser together on Monday and now that all my clothes are tucked away nicely, my room is almost functionally ready! I just need to figure out the plug-in situation and I’ll be good to go. Now I just need some help with the decorating.

Here’s what I have so far:

IMG_4084The corner to the right of my window will be my work station since it’s so bright. The room is huge so I’m actually going to scoot the table out a few feet, put the extension in, and put the chair back in the corner. Then I can sit behind the desk and tell people to “step into my office…” haha! P.S. Those two huge bags are clothes I’m ditching. Woohooo!

IMG_4085My little twin bed is tucked cozily into the little nook where the ceiling slants down. On the wall above it, I hung my umbra flowers. They sort of fan out as the wall gets bigger and it looks really pretty. All I need is a night stand and this corner of the room is done!

IMG_4087At the foot of the bed is my snazzy new dresser and my crappy plastic one (full of workout clothes and sweats). That elephant poster says, “you’re kind of a big deal” and I think that’ll be a great thing to wake up to every morning.

IMG_4088My friends in Billings are giving me a beautiful mirrored vanity that I’ll set up here so I can do my hair and make up in my own room. I’ll pair the vanity with this chair my sister found for me:

IMG_4083It’s beige with metallic gold embroidery and ornately carved legs. So beautiful! So that corner is just about done too!

Here’s an overview of the whole room so you can get an idea of how all the pieces fit together.

IMG_4090Now here’s where you come in! All the corners and walls are essentially done, with the exception of needing a few more art pieces, but I need some ideas for the middle. It’s hard to tell in this picture but the room is huge and the entire center of it is just empty.

Tap dance studio? Pool table? Put-put golf? I need your help here!!

 

Decadent French Toast Topper

Yesterday was one of the best days I’ve had in a while! I got some work done in the morning and then my friend Gavin picked me up for lunch at 12:30. We headed to El Cazador since I’ve been craving Mexican food like crazy, and it was delicious!

ElCazador-BOM2012That guy wasn’t there though. Sad day. I had a bean enchilada on a corn tortilla with some rice, yum 😀 After lunch we walked around downtown for a while before stopping at the Big Dipper for ice cream.

BigDipper2copyrightmargaretdewilliamhorton-300x200This place has some of the best ice cream around and if you walk by around 7 or 8 on a summer night, you wouldn’t believe how long the line is. Luckily we didn’t have much of a wait at all and I got my white chocolate oreo scoop in a snap!

Around 3:30 Gavin and I met up with some of his friends from the football team along with some of their sisters/girlfriends/friends who are girls, ect. We floated on the river (I’m not sure which river it was…hmmm…) for a few hours just enjoying the sun and the cool water. There’s really no better way to spend a summer afternoon than being lazy on a river.

clarks-fork-river01All the boys had to be back for football practice at 6, so I went home to make myself dinner. Organic beef, roasted sweet potato, and peas were on the menu. I was super hungry and everything tasted great!

IMG_4055After I ate and showered, Gavin came back over and we watched “The Intouchables” on Netflix. It’s in French with subtitles so you have to pay attention, but this is an awesome movie. I was laughing SO hard at some parts and crying at others. Watch it!!

The-Intouchables-French-Movie-PosterThe fun continued today when I took the girls to the library and met them for lunch at the Tamarack with their mom, Jill. I had a salmon caesar without croutons and left happy.

lThe rest of the day has been spent doing homework, lounging around, and waiting for it to cool off a little so I can go on a walk. I wanted to share a little recipe I accidentally came up with for dinner tonight, though.

I had french toast with my gluten-free bread and was going to top it with strawberries and some marionberry syrup. Well, I over microwaved the strawberries and they got mushy and runny, so I just mixed two tablespoons of syrup right in!

IMG_4060The result was a decadent topping for my french toast. Um, yum! Just microwave 1/2 cup of frozen strawberries for 2 minutes, then stir in any fruit syrup of your choice. Pour over two slices of french toast and enjoy!

Lake Getaway

This weekend was exactly what I needed. It felt so much like summer and completely carefree and wonderful. Let’s start at the beginning! 

Saturday morning I woke up early and went to The Break, a really nice coffee shop downtown, to do some school work. Once I’d finished up, I took a long walk around my neighborhood and on the river trail. 

IMG_3912 IMG_3914Missoula is truly stunning in the summer, it doesn’t get much better than this. After my walk, I met my friend Tyler at Carver’s deli for lunch! My cousin Phoebe works there and they just opened last week. Her description of the food prompted me to get there ASAP! 

IMG_3915I had the turkey club and it was so much more than your typical sandwich. Tons of fresh turkey, thick spiced bacon, chipotle sauce, guacamole, lettuce, and tomatoes. Tyler and I both agreed it was a winner! If you’re in Missoula, check it out. 1300 S Reserve. 

Driving home from lunch, I happened to glance over at a garage sale and notice a table that would work perfectly for my desk. I pulled over quickly and made the purchase! They delivered it for me and even threw in all these nice Fiesta dishes for five bucks. 

IMG_3918I love to spread out when I work, so having a large flat surface will be perfect. A few hours later, I picked Phoebe up to head to our family cabin on Pierce lake! It’s one of my favorite places in the world. A serene, glassy lake in the woods entirely surrounded by forest and mountains. Heaven. 

IMG_3922We spent the evening talking on the deck and enjoying the view. When our tummies started to grumble, my Aunt Caroline made pasta with pesto, steaks, and corn on the cob. YUM. 

IMG_3925 IMG_3926 IMG_3927After dinner we took a walk around the lake and spent more time just relaxing. I always sleep so well at the cabin, because it gets completely dark and the hum of the forest lulls you into slumber. 

This morning I woke up around 8 to enjoy my morning coffee and cereal on the deck. 

IMG_3931I read some short stories by Wallace Stagner, dozed, sat on the dock, and enjoyed where I was. Around 11 Caroline whipped up some eggs and hash browns for hiking fuel! Phoebe, Caroline, and I were out for about an hour and a half and when we got back we were all hot and sweaty. 

Solution? Jump in the lake! We spent the rest of the day swimming and lounging on the dock. We also enjoyed the rest of the pasta and made a steak salad to fill us up for the ride home.

IMG_3930Phoebe and I left around 5 and I’m feeling tired and happy. 

Sometimes a weekend at the lake is just what the doctor ordered. Hope yours was awesome as well! 😀 

 

Bad Day vs. Good Day mash up

When you think about it, there are very few truly bad days. Even on some of the worst ones, there are good moments or fun things that happened after or before the crap snuck in. Yesterday was one of those! Let’s start with the bad because it’s so much better to end on a positive note, dontcha think?

Bad

1) Signing into blackboard to turn in my online paper and realizing I missed one of the tests while I was moving across the country, and I can’t make it up. Insert minor heart attack.

tumblr_m4016qhlHg1rolvqk2) Meeting with my advisor and finding out that my credits from University of Texas only count as electives so I have to re do the entire semester. I went to the head of the pre-med department and the registrar’s office, but nobody could help me. 16 grand and months of studying flushed down the toilet. Insert full blown panic attack and lots and LOTS of tears.

Good

1). I went to a pre-med meeting and left feeling like I have such a great support system here that really wants me to succeed. I also went to a “getting involved on campus” workshop and won a cool water bottle!

IMG_39072) I had an amazing lunch in the sun that consisted of whole wheat bread, avocado, and a super sweet apple.

IMG_39093) I had an incredible dinner with my aunt Caroline, uncle Fred, Phoebe, and Tobin and had a really great night talking with all of them. Then Phoebe and I went grocery shopping and I have some great meals planned for this week!

IMG_3911 IMG_3910Today I’m having lunch with my friend Tyler and then heading up to my cabin for the night! I’m still kind of sad but every day will keep being great and everything will turn out okay in the end 😀 Have a great one!

The Idiot

Today was a very productive day! It started bright and early with a 7am wake up call and a hearty, delicious breakfast.

IMG_3892I figured out that putting the peanut butter on top of my oatmeal while its still hot is SO much better than stirring it in while it cooks. You can taste it so much more and every bite has a little ribbon of creamy, melty deliciousness.

After breakfast I finished up my psychology research paper. It took much longer than it should have due to many breaks and general distractedness, but around lunchtime I finally finished and ran out to run some errands (after eating a bowl of quinoa and an apple).

IMG_3901I mailed Halley her climbing shoes, sent the rest of the money I owed to the people who I bought the bed from, and returned some things from Target. Then I came home and relaxed for a bit before heading to my transfer student meeting on campus.

As I was sitting outside the lecture hall before the meeting, two people walked up to me. Feeling super social, I introduced myself right away to the woman and was super smiley and sweet. I then proceeded to ask her the name of her dad.

Who turned out to be her husband.

Why???

tumblr_inline_mhrsry5e5X1qz4rgpThen we had to sit there for like ten minutes and wait for the meeting to start. That wasn’t awkward at all. Once the meeting was over, another wave of incompetence hit me and I was totally unable to find my way home. This is not a large campus. See, there is a little park across from my house that I’ve never noticed before, so when I saw that park I thought I must be going the wrong way.

rD1J7gVI wandered around the empty campus for thirty minutes getting more and more turned around and hungry. Finally, I had to call my mother and she gave me step by step instructions on how to get home (she grew up in Missoula). Yep, almost twenty years old folks and my sense of direction has refused to kick in. Sheesh.

Once I was done being an absolute moron for the day, I spent the next hour enjoying my book in the newly discovered park outside my house! After munching on some almonds and a small bowl of cereal, that is.

IMG_3902At six I walked down to my cousin, Phoebe’s, house to join her at “out to dinner”, an event held in the park by the river downtown. It was a gorgeous night and I am still blown away by how beautiful this city/state is.

IMG_3903I had a pulled pork taco and a beef taco with spinach, salsa, guac, and pepper jack cheese. Holy yum!! After dinner we walked around downtown for a bit to soak in the evening before calling it a night.

IMG_3905When I came home I had a really fun and long conversation with my roommate Madi. She’s  awesome! Now I’m off to bed, I have an entire day of orientation tomorrow. Lets see how that goes, shall we?
